My eclairs didn't really puff up. Anyone have any tips or thoughts where I might have fine wrong? Still tasted delicious, just looked a little wonky!

Hi there,
I cannot wait to try this! I was wondering if you could give me any recommendations on good cookbooks or baking books that you use regularly. I love your site by the way, I use the recipes regularly and they never disappoint. I'm always so excited to try them!

[...] I didn’t forget my promise to find the link to the recipe I used for the cream filling on the pate a choux. It even has the note/tip about using a fine-mesh sieve, if necessary. Only change I made is to leave out the pinch of salt since I didn’t have unsalted butter, just salted butter. This site also has some other really yummy recipes, of which I’m going to try the Irish Brown (Soda) Bread next week! Here it is: http://www.browneyedbaker.com/2008/06/17/eclairs-and-cream-puffs/ [...]

Thank you so much for the step by step instructions it was a HUGE help for making these for the first time. The pastry cream was DELICIOUS!!! I had a little bit left over and my daughter was eating it up without the shell. I made these for a friend and posted them on my site.

I make the (savory) puffs to sell and fill with either chicken, tuna or cheese (these 3 ingredients are mixed with mayonnaise). They are in a display glass case for about 6 hours.. how do I keep them from getting hard??

pssst! Just between you and I? I read your comment regarding the Tuesday site or whatever it is..... I'm a newby, with a brand new site, and I came across that same site the other day, and wrote and said, yeah, I'd love join.

I recieved a very nice email, which contained rule after rule I was to follow in order to be a "member".......

And even that's ok, but telling me I gotta buy some "book" and that I MUST make a recipe on TUESDAYS at least two of four weeks, just turned me off.....

and that if I couldn't do it, I MUST send an email explaining why I wasn't making the designated recipe that week....etc. etc....

Uh, I don't think so.......I was just trying to find some folks with food blogs who might enjoy my association.....

I wasn't looking for dictated requirements...

anyway, I'm done now.... lol........ thanks for listening.....

No one has to agree with me, I'm just sayin'....... some of these groups should lighten' up.....

Oh by the way, my site is: http://themerlinmenu.blogspot.com

Hi Allie, I'm so glad to hear you enjoy my blog!

I actually did freeze the cream puffs and eclairs after baking, and my husband has been enjoying the cream puffs as the occasional dessert :) I cannot attest to the re-crisping in the oven, because we usually just pop them in the microwave for 15 seconds to thaw them a bit, but they taste great!

Hi, I love your blog! I was wondering if you had tried freezing any of the cream puffs after baking? They say you can re-crisp them after, but some people seem to think that doesn't work.. Some people suggest freezing before baking. Thanks!

Oh my gosh, this is my favorite sort of dessert. They look wonderful. Of course, I could just sit with a bowl of the filling and eat it with a spoon but that would be a really bad idea!

You might have to find a real cooking store for a large tip. I use one of the jumbo star-shaped tips for big cream puffs. Technically I guess you don't really need a tip -- just cut the end of the disposable bag to the right size and the opening will be your tip.

Tip size? All depends on what you're trying to make.

Bite-sized eclairs? #005 Atecco Tip
Med-Large sized? #008/#009 Atecco Tip

Depending on how good you are with the piping bag, cream puffs can be made with any sized tip. Small tips will just take longer and be more difficult to get an evenly shaped ball :)
