		<description>Hi Liz, With risotto the quality definitely gets compromised the longer it sits and it&#039;s definitely not the same re-heated. It has a smooth and creamy consistency when it is first served that you really can&#039;t replicate once it has cooled. It might not matter to you though; you could do a trial run, reheat it, and if you like it then go with it!</description>
