S’mores Stuffed Chocolate Chip Cookies

This version of stuffed cookies is one of my very favorites, it’s an inside out gooey s’mores wrapped in butter crisp chocolate chip cookie dough. If that doesn’t sound to die for, I don’t know what does. Hope you’ll enjoy taking a peek at my “S’mores Stuffed Chocolate Chip Cookies!”

S'mores Stuffed Chocolate Chip Cookies

Yield: 12 large cookies
Prep Time: 20 minutes
Cook Time: 16 minutes
Total Time: 40 minutes
Ingredients:
2 sticks (8 ounces) softened butter
1 cup granulated sugar
¾ cup packed light brown sugar
2 eggs
1 tablespoon vanilla
3½ cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
2 cups semisweet chocolate chips
24 graham cracker quarters or 12 full sheets separated at perforations
3 Hershey Bars, broken into rows of 3 bars
12 large marshmallows cut in half lengthwiseDirections:
1. Preheat oven to 350 degrees F and line a large baking sheet with parchment or a silpat liner.
2. In a stand or electric mixer, beat the butter and sugars until light and fluffy. Add eggs and vanilla, continue to beat until well combined.
3. Place flour, salt and baking soda into a bowl; mix to combine then add slowly to wet ingredients along with the chocolate chips.
4. Layer a graham cracker quarter with 3 Hershey chocolate squares and 2 marshmallow halves. Close with another graham cracker. Top s’more with a large scoop of cookie dough. Place in hands and place another large scoop on bottom then front and back sides as needed. Form dough around s’mores. Will get messy, but stick with it, it does not have to be perfect. S’mores will move around but it’s no big deal. Place large cookies onto prepared baking sheet and bake for 15-17 minutes or until edges are golden and centers are cooked through. Let cool for 10 minutes before transferring to cooling rack or serving plate.

this is the third recipe I’ve tried from your site… OMG! I LOVE IT!!!
they were messy to make BUT worth every bit of it! unbelieveable! Thanks for the Wonderful chewy chocolate chip cookie recipe also they were perfect for chocolate chip cookie sundaes! I willnever make another recipe as they are the BEST! now the biggest question is what to make next and how long am i going to have to spend on the tredmill?

I am trying to change my eating and exercise habits in order to give me a longer, healthier life….and yet, I keep coming back here to get ideas for my one day a week where I allow myself anything I want to eat and I’ve found this week’s yummy yum!!! Although I can’t get grahm crackers in Norway or chocolate chips, I can find something similar for the grahm crackers and I’ll use cut up chocolate in chunks…I’m sure this will be as great as it looks!! YUUUM! Thanks for sharing (as always!)

Yeah, it’s hard to find Graham Crackers outside of the States. I’ve found that Digestive cookies, made by Mcvities, work as a good replacement.

Great idea but I think I will try it making a mini version… a mini marshmallow,half the graham cracker and half the chocolate. There is no way I can rationalize making such a giant cookie but a smaller version…yep, I have no problem amking or eating!

I made these this weekend! While they were delicious, the amount of smore filling should be halved…the cookie was unwieldy.

I just made these. They’re AWESOME! However, the marshmallows puffed up so much they came out the top! They are still DELISH! I can’t wait to take them to work with me tomorrow.

I tried making these and they did turn out DELICIOUS!!! But, mine looked nothing like the picture! I didn’t really expect it to, but mine turned out looking like I just threw on a HUGE pile of cookie dough onto the baking sheet. Any tips on how to make these look so nice? Mmmm they were delicious though…

funny story- my friends tell me i have a “heavy hand” with everything- especially when it comes to desserts:) well… i was wondering why my cookies weren’t coming out like the picture and then i realized i was using a full graham cracker, two whole marshmallows, and three pieces of Hershey’s chocolate from the BIG bar! well needless to say they came out larger than life but taste AMAZING!!!

What a mess! Delicious, but what a mess. I ended up cutting the graham cracker in half and using only a quarter of the marshmallow and half of the Hershey piece. This way it made a reasonably sized cookie. It was much easier to wrap the cookie dough around the smaller s’more. I think these would be great for a summer BBQ.
