The Weekend Dish: 5/7/2011

This past week was mightily consumed with all sorts of Mexican food and drink goodies leading up to Cinco de Mayo on Thursday. I love Mexican food, so I enjoy embracing the occasion to play around with new recipes and eat chips and salsa for dinner (and of course love any excuse to infuse baked goods with liquor!). As you’ll see in my bookmarks this week, I definitely had Mexican on the brain! What did you all do to celebrate Cinco de Mayo?? Any good eats or drinks?

Avocado Ice Cream (Two Peas and Their Pod)
I have had my eye on this recipe for some time, and getting the nod of approval from Maria and Josh makes me want to dig in. Love avocados and can’t wait to experiment with this ice cream recipe!

Brown Rice Horchata (Gina’s Skinny Recipes)
I have never had horchata, but it looks so smooth, creamy and refreshing. And I pretty much never eat white rice (unless I order Chinese!), so I love that this recipe uses brown rice.

Churro Cookies (Heat Oven to 350)
Mmm sugar and cinnamon goodness! Major confession: I have never had a churro. But, I think these cookies could be the first step to falling in love with all of that fried cinnamon goodness!

Guaquitos (Duhlicious)
I have seen a lot of taquitos making their way around the blogosphere and since I haven’t been eating much meat at all, I really wasn’t drawn to making them. But these?! Filled with guacamole and fried!? Come to mama!

Italian-Style Dog Biscuits (Sugarcrafter)
I can be totally won over by pretty much anything dog-related (or polar bear-related), and I love that Tracy baked up these treats for her pup! It’s also awesome that Riley and Einstein could be twins… ahh, to be a puppy again! So cute!

    I’ve had Avocado Ice Cream. It is rich and delicious. Christine’s in Cambridge, MA makes it. I had it in 2002. I wonder if they still do. Anyway, it is wonderful. Sounds weird but it is really good. I am going to make some this summer.
