No-Bake Peanut Butter Butterscotch Crisp Cookies
Sometimes it’s nice to slow life down just a little bit. Stop and smell the roses. Doesn’t it feel like we’re always rushing somewhere? Or rushing to get something done, so we can move on to the next thing or hurry out the door? I feel like life moves way too fast in our uber-ambitious culture. For instance, I have been eating Smucker’s natural peanut butter (the chunky variety, thank-you-very-much) for at least 6 months now. Almost every day I open that jar. Can you believe it was only yesterday that I realized there was a recipe on the lid?? Talk about not paying attention! The silver lining? It was a great recipe, one I could whip up in record time, and share with you today. I know how much you all love the original no-bake cookies, and figured you would really like this one!
Just like regular no-bakes, all you have to do is melt the ingredients together, stir in the mix-ins, scoop onto a sheet, and then chill until they’re set! Easy peasy! It’s a great recipe to make with kids, too.
The original recipe called for chow mein noodles, but I’m all about maximizing my pantry and since I had a half-full box of Rice Krispies leftover from some other recipe, I decided to make the swap. Plus, pretty much anything with that characteristic crunch turns out fantastic! I can see myself doing some serious experimenting with this base recipe – swapping out the butterscotch for things like chocolate, toffee, maybe those mint chocolate chips around the holidays? Loads of possibilities!
Do you have a favorite no-bake recipe?

No-Bake Peanut Butter Butterscotch Crisp Cookies

- 1¾ cups (451.5 g) peanut butter, creamy or chunky, natural or regular
- 12 ounces (340.2 g) butterscotch chips
- 1 cup (180 g) white chocolate chips
- 1 cup (146 g) chopped salted peanuts
- 3 cups (84 g) Rice Krispies cereal
Instructions
- 1. Line two baking sheets with parchment paper; set aside.
- 2. In a medium saucepan combine the peanut butter, butterscotch chips and white chocolate chips over low heat, stirring occasionally until completely melted and smooth.
- 3. Stir in the peanuts and Rice Krispies cereal. Drop mounds (about 2 tablespoons each) onto the parchment-lined baking sheets. (You could also use a medium-size cookie scoop.) Chill until set, about 1 hour. Store in an airtight container at room temperature or in the refrigerator.

Oh these are just delightful! So easy to make and super yummy! My husband loved them also. No heating up the house with the oven on a hot muggy day like today! Love your recipes. Thank you for sharing! I will definitely be making these again when my children and grandchildren come next weekend! Can’t wait!Â
I had bought the butterscotch chips but when I got home I realizedI only had two oz of white chocolate on hand, so I used that, and did the rest with chococolate and they came out yummy!
I made these slightly differently as I didn’t have all the ingredients (and the stores were closed!). I made them with milk chocolate chips instead of butterscotch and with gluten-free rice krispies (my best friend has a gluten allergy) and they turned out delish! If I were to make them again, I would definitely try the original recipe and maybe a mix of milk and semi-sweet chocolate chips. Thanks “Brown Eyed Baker” for another delicious baking recipe!!
I made these for a cookie exchange in Dec…huge hit! so good and easy when you need to make cookies in a big volume. Loved them!
I had tried this recipe 2 times. It turns up with chewy and soft texture. Is it suppose to be like that? Or i done some mistake during the process? I hope some one can reply me and tell me the correct texture because i plan to do this for Christmas night. Thank you.
Hi Kah, Yes they definitely should be chewy – you didn’t do anything wrong!
Don’t forget, you were planning to try my recipe…

If the link doesn’t work, go to Food.com and search for K-Lusters. I think you will like them! Sorry no photo yet–I want to do that soon. That means I’ll have to make them again, yay! =)
I’ve never tried no bake cookies before, but I love peanut butter so I think I’ll definitely have to give these a go.
i didn’t have butterscotch or white choco chips….. so i improvised and made a choco hazelnut version of this cookie. i substituted homemade almond butter for pb(would have made hazelnut butter but too lazy), added a cup of nutella, substituted chopped salted hazelnuts for peanuts and used semi sweet and milk choco chips. these were awesome:). my kitchen was really warm so it seemed as though they would never set up. thought we would be eating them with a spoon. but they finally set. probably a little softer than original recipe because of the nutella, but nothing major. so many possible variations for this recipe. i think i will try macadamia/craisin/orange combo next:).
these look delicious & quick! yum!
These look good! I’m always looking out for new no-bake recipes for a quick treat.
Love no-bake cookies, especially in the summer! I made these over the weekend … didn’t have enought peanuts … so I added more Rice Krispies and it worked out well. I just posted this on my blog. Thank you!!!
Hi Michelle,
I love reading your blog. Really great recipes and these cookies look so good!
I live in New York City and recently started my own cooking blog called “Cookin’ with the Kaptain” Like you, I’ve had no formal training when it comes to cooking and I’m learning as I go. I’m new to this and would love to hear what you think about my blog!

Take a look and let me know what you think.

I love finding recipes like that and then trying them. These sound very similar to those “haystack” cookies that we all ate as kids. Although, I love your take with the rice krispies. Delicious!
umm, yum!! You had me at peanut butter =D
I m not good about cookies, this looks awesome and honestly dont ve any no bake cookie recipe.. i should search , i m sure mum knows:)
I actually have everything but the butterscotch chips in my pantry right now! Might have to make that swap for chocolate chips and have a go at these beauties =)
No bake cookies are so wonderful, especially in the hot summer weather where turning on the oven seems torturous! These look amazing!
This is terrific! I like delicious cookies and I remember the no bakes we made as a kid…I bet these are MUCH better!
Chocolate no bakes are my favorite and I can’t imagine how much I’d love these, I adore butterscotch chips!
I agree: sometimes the best thing in life require a serious slow-down. Especially in the kitchen! These cookies look like the perfect way to accomplish that peace of mind. Thanks for sharing!
Holy Moly! Just made up a batch of these and they are AWESOME! Just sampled one and was delish, plan on sharing with my Dad’s caregivers! Thanks for sharing such a simple, easy recipe! Keep up the good work!
Oooh these look so good! I need to make these this weekend.
I love baking, but when I have this kind of recipe that do not it…I love it more…!!!
You can never have too many no bake cookie recipes! I don’t have any like this! They sound fantastic.

This is going to my sweet portion of the menu for tonight’s Girl’s Night Out along with your White Sangria recipe :)
My kids have a play date set up with a couple of their friends over the weekend. I think we’ll make these together – and maybe they’ll share some with me. ;)
I could shove maybe 57 of these in my face, this instant.
This sounds so perfect… pb and b, yum.
I <3 no bake cookies <3
I love no bake treats and these look fantastic!
Love the idea of maximizing the pantry. These sound delicious and no-bake is even better.
Yummy and easy! The perfect cookie!! I get off work at noon today I think I might have to whip up a batch this afternoon!
I have that same peanut butter! There’s a recipe on the lid? Really? I’ll have to look when I get home. I bet these cookies are delicious. PB & butterscotch are my kind of cookie. :)
My mother made chocolate no-bake cookies using chow mein noodles & I’ve seen Scotcheroos, but the white chocolate is a new twist. I love the chocolate/peanut butter/oatmeal ones because I always have the fixins on hand. Enjoy your Labor Day weekend!
These look delicious!! SO easy and SO creamy looking! Love it :)
My grandma made a version of these cookies, only with Special K cereal. Think her recipe also has corn syrup and no white chocolate chips. It was one of my favorite cookies when we stopped to visit. She made the best cookies and bars!
I love no-bake cookies, but I’ve never thought of doing a non chocolate version, or using rice crispies. Love this!
To this day my favourite no bake is still the traditional Rice Krispies Squares, and it doesn’t have to be a fancy version either. Every time I eat one I am instantly transported to my childhood.
Ok I totally misread the title as being BUTTERSQUASH…I thought, how interesting…you made it look so delightful! although the butterscotch makes more scense, I’m wondering how squash would fare in a baked treat.
Would you believe that I’ve never even tasted no-bake cookies? Horrible, right? I need to make these – they look awesome!
I really agree with you on needing to slow down a bit! These look terrific, I love no-bake cookies… especially when they involve peanut butter:-)
Mmmm heaven.
Yum, I love it when you get maximum taste for minimum effort! These look awesome.
The only crunchy thing I have on hand right now is Fiber 1 cereal.. I wonder if all the good peanutbuttery/chippit-ey sweetness will totally mask all that fiber…
I used to make these eons ago when my son was little! Had forgotten all about them. Definitely will make next time he comes over – he’s all grown up now! Wonder if he’ll remember?
