The Weekend Dish: 10/1/2011

Happy October!! I can’t believe that September has already come and gone, how time flies! I’m still in Florida for a few more days before heading back to Pittsburgh and the 50-degree weather that October has delivered there. But on the bright side – T-minus 10 days until the Pens home opener! Can’t wait! Unfortunately, it looks as though I’ll be spending my last few days down here convalescing from a yucky cold-type thing. Absolutely no fun. But since I don’t feel well I’ll enjoy any type of comfort food I can get my hands on! My go-to’s are broth-based soups, peanut butter & jelly, pizza and macaroni & cheese. What do you enjoy when you’re sick?
As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!
On Brown Eyed Baker This Week
Pumpkin Fudge – Another fun fudge recipe, loaded with pumpkin, white chocolate, pecans and spice. Smells like pumpkin pie!
Winner: SodaStream Giveaway – Congratulations to the winner of the SodaStream giveaway!
Classic Apple Pie – Nothing says fall quite like a classic apple pie – flaky crust with piles of apples. Delicious!
Honey Cake – A moist, spiced honey cake full of amazing flavors. A classic Rosh Hashanah dessert.
Noodle Kugel – Another Rosh Hashanah recipe – a unique recipe for sure, but so amazingly delicious. You can eat it warm as a side dish or cold as dessert (I obviously prefer dessert!)

What I Bookmarked This Week
Recipes from other blogs that I thought looked especially delicious and that I thought you would like too:
Apple Cheesecake Crumb Bars (The Naptime Chef)
I love cheesecake bars and don’t make them nearly enough. These are definitely going to get made sooner rather than later.
Apple Pecan Cheesecake (Baked by Rachel)
I certainly had eyes for apples and cheesecake this week! This looks amazing – cheesecake topped with an apple-pecan streusel on top. (If you like the sounds of this, you might also like my Brown Sugar-Apple Cheesecake.)
Baked Apple Cinnamon Raisin Oatmeal (Smells Like Home)
I have a great baked oatmeal recipe that I love, but I’m always up for trying something different, and this particular version looks great.
Cherry Coke Float Cupcakes (Pass the Sushi!)
Oooh my! After how much I loved root beer float cake, I am all about baking with soft drinks, and these look incredible!
Pumpkin Spice Latte Cupcakes (Handle the Heat)
More baked goods fashioned after delicious drinks, I can’t resist! Plus, pumpkin anything this time of year has my heart.
Have a delicious weekend!
