I’ve had to stop baking because our hand mixer is too difficult for my to use with some of my health conditions. However, my husband loves to bake and on a whim will decide to bake cookies.

And one day we spend baking with my husband’s grandmother making red velvet cakes for Christmas eves. Making goodies is a blast but the memories you make doing it is ten times better. I’ve already made 200 cupcakes and 400 cookie press cookies for my students for a cookie decorating party (YEAH that SOUNDS like a great idea for 8th graders…. ) and I plan on making a gingerbread house, all the ensuing icing for that, as well as another batch or two of cookies here and there.

Its a tradition here in Portugal to set the table on xmas eve and only remove it on the 6th of January. So this means I will be baking nearly everyday to make sure that nothing is missing on my table, so that all my family and friends can enjoy and have sweet xmas.
