The Weekend Dish: 2/12/2012

This has been one jam-packed, flew-by-in-a-split-second, type of week. From the Giants winning the Super Bowl to lots of kitchen time, my Chief Culinary Consultant’s birthday, and a day full of anniversaries yesterday, it was definitely a crazy fun week. Not only did I get to celebrate my 5th blogging anniversary yesterday, but our family spent the day celebrating my grandparents’ 60th wedding anniversary. 60 years! So crazy to think about; not many people are fortunate to celebrate such a milestone, and it was wonderful to be able to celebrate with them. Tonight my Chief Culinary Consultant and I are headed down to the Pens game against Tampa; a great way to close out the weekend. I hope you all are having a fabulous weekend, and stayed safe if you got snow yesterday!

Your peach crumb bars are to die for! Works well with cherries too, but peach is best! Add vanilla ice cream and holy cow……perfection!

I agree, I use it to fill Chocolate Cupcakes and everyone thinks I am so smart. I draw it up into a syringe, gently poke the point into the cupcake and squeeze gently. I have also done this with whipped cream and peanut butter into carrot muffins. So good.

My Favorite recipe has to be the Tiramisu Cupcakes. They were a bit time consuming but well worth it. I made them for my friend Jen’s birthday and got rave reviews!

Our all time favorite Brown Eyed Baker recipe is the Peanut Butter Cup Bars. So easy and so delicious. Always a hit. My hubby is a PB fanatic. My son is allergic so if I make them it is only for hubby (and me). This time I put the mixture into a heart shaped cake pan and made hubby one large heart, all for him. He loved it and ate almost half in one sitting. Told me to get it away from him or he would eat the whole thing.
I’ve made many of your recipes and they are always terrific. Never had a complaint about any of them. Keep up the good work.
