The Weekend Dish: 2/18/2012

I hope that you all enjoyed a wonderful week and that you especially enjoyed a delicious Valentine’s Day! What did you do to celebrate and, most importantly, what did you eat?
I’ve had a great deal of success in the kitchen this week and can’t wait to share all of the recipes with you in the coming days. I kicked off some Mardi Gras-themed food yesterday with my Bourbon Bread Pudding and have a couple more festive recipes up my sleeve to get you ready for Tuesday, so stay tuned!
As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!
On Brown Eyed Baker This Week
Red Velvet Ice Cream – An amazing combination of cheesecake ice cream and red velvet cake crumbs. Love this!
Baked Hot Chocolate – A quick and easy decadent dessert using only four ingredients.
No-Bake Biscoff Cookies – A guest post for Tracy of Sugarcrafter – I created a peanut butter-free version of my favorite no-bake cookies.
Chicken Tortilla Soup – A copycat recipe of Max & Erma’s famous tortilla soup – thick, spicy, cheesy, and absolutely delicious.
Bourbon Bread Pudding – Kicking off some Mardi Gras food with a real kick – bourbon-laced bread pudding with an awesome bourbon sauce.

Bacon and Corn Griddle Cakes (RecipeGirl.com)
I love good old-fashioned pancakes, and I really love this souped up version with bacon, corn and seasonings. Hello Saturday morning!
Bourbon Layer Cake with Bourbon Ganache and Milk Chocolate Buttercream (Love and Olive Oil)
I have some bourbon left after making my bourbon bread pudding this week; I think I need to create an excuse to make this cake.
Chocolate Peanut Butter Surprise Cookies (Big Flavors From A Tiny Kitchen)
These look like a cookie version of peanut butter cups – can’t wait to try them!
Fudge Stripe Cookies (Tracey’s Culinary Adventures)
One of my all-time favorite cookies when I was in high school; I love the homemade recreations of old processed favorites
Pear, Pistachio, and Ginger Blondies (Erin Cooks)
What an amazing combination of flavors! I can’t wait to bake these up!
Have a delicious weekend!
