The Weekend Dish: 4/21/2012

What a crazy fast week this one was! It ended with some gorgeous weather, but I just took a peek at the forecast and I see the word “snow” on Monday, with a high of 44. What the heck is going on?! Hopefully that’s short-lived so the warm weather can stay permanently and we can get some gardening started! I posted something a little different yesterday (see “Friday Stuff n’ Things“) – more of a random collection of things from throughout the week. I’d love to know how you liked it, and if you’d like to see more in the future!

On Brown Eyed Baker This Week

General Tso’s Chicken – The most amazing recipe for one of my take out favorites. LOVE this recipe!

DIY Instant Vanilla Pudding Mix – Keep a batch of this on hand for when you want homemade pudding, or to use in recipes that call for boxed mixes.

Homemade Rum Cake – Nothing beats a moist rum cake, but most recipes call for box mixes. This one is 100% from scratch. And it’s amazing!

Oatmeal Fudge Bars – A fudgy brownie layer sandwiched between layers of oat crumble. The combination of oats and chocolate is totally underrated!

    Our weather, we went from 60′s to 90′s over night! I had the heat on last week and the air on today! Crazy weather!! Love your weekly recap! It’s way easier for me to save your recipes. I’m going to make the oatmeal fudge bars this weekend! Have a great weekend!!!

    I made both the General Tso’s chicken and the Oatmeal Fudge bars this week….both were HUGE successes! My husband already wants me to make the General Tso’s again, so I’m going to make it for my parents in a couple of weeks. Thanks so much for the great recipes! :D

    I’m from Pittsburgh too, and this whole snow thing is throwing me for a loop. I’ve been hearing we’re going to end up missing it, or we can get up to a foot. So now I guess we have to be prepared for anything. Also, I know you’re an extreme Pens fan as I am….so :(
