The Weekend Dish: 6/16/2012

Ahh, hello Saturday! This weekend in particular seemed to be a long time coming. I had some major kitchen hiccups earlier in the week, and by Wednesday I was officially ready for the weekend! My Chief Culinary Consultant and I gave the week a nice send off by spending yesterday evening outlet shopping since the weather was beyond beautiful. It was a successful shopping trip (read: many bags), especially since we made our customary stop in the food court for an Auntie Anne’s pretzel. It wouldn’t be outlet shopping without one! Today, I’ll be helping my mom to prep some food for a cookout tomorrow to celebrate Father’s Day in conjunction with my grandpap’s birthday. What are you up to this weekend? Are you making anything special for Father’s Day tomorrow?

As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!

On Brown Eyed Baker This Week

Hot Fudge Sauce – A recipe for homemade hot fudge sauce that you will want to keep stocked in your refrigerator at all times!

Crab Cakes with Rémoulade Sauce – Amazing crab cakes, which have become a part of our family’s Christmas Eve tradition. Christmas in June, anyone?!

Coconut Cream Pie – A throw back to one of my all-time favorite classic desserts.

German Chocolate Cake – The BEST German Chocolate Cake, EVER. Perfect for celebrating Father’s Day!

Chocolate Sprinkle Thumbprint Cookies – My attempt at recreating a favorite cookie from the local grocery store bakery.

Free Food Friday! Giant Eagle Market District Giveaway – This is a new feature on BEB and one that I hope you’ll enjoy as much as I will! Every couple of Fridays I’m going to be bringing you food-centric giveaways from some of my favorite food brands. I hope to introduce you to some new gems, as well as share with you some well-known and much-loved companies as well!

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like too:

Avocado BLT with Fried Egg and Chipotle Mayo (Closet Cooking)
I swear, Kevin makes some of the best sandwiches around! His newest creation has me drooling; it sounds like an uber-fancy deli sandwich. I can’t wait to whip it up at home!

Bacon Avocado Grilled Cheese (Dinners, Dishes, and Desserts)
I made myself a grilled cheese sandwich last Sunday afternoon and suddenly realized how under-appreciated they are. If only I would have had bacon and avocado to add to it!

Broccoli Parmesan Fritters (Smitten Kitchen)
My mom always makes multiple varieties of fritters for Christmas Eve, so we definitely need to save this recipe to test out before the holidays.

Homemade Cashew Cookie Larabars (Chocolate-Covered Katie)
I love the combination of nuts and dried fruit as a snack, so these sound perfect. Love that they’re no-bake!

*THAT* Chocolate Cake (Desserts for Breakfast)
Oh my good God, what an incredible chocolate cake! I need to eat this immediately!

What was the best thing you ate this week??

Have a delicious weekend!

Ok, when I first saw “that chocolate cake” and read that it said “dessert for breakfast” I put two and two together and…

Maybe that was wishful thinking. :)

And now I have to go find out about your hot fudge sauce. Your photos are always so beautiful!

Chocolate Chip Cookie Dough Billionaire Bars! Made them, loved them, brought them to pot luck after daughter’s kindergarten graduation. The not so smart people in charge set them out in the gosh darn sun. They began to turn to mush! Made me so mad that we snatched ‘em up and brought them back home, popped them in the fridge until they were firm and then devoured them. My family was so happy that it happened so they could have them all to themselves. Anyone and everyone that had a nibble demanded I email them a link to your CCCDBB recipe. Too bad the pot luckers missed out.

Maybe next time you should volunteer to be in charge to make certain food is set out properly?

I made your salted chocolate shortbread cookies to take to a grad party later today. They were easy to make and I like the way they look. My husband tried one and loves them! (i’m off sugar and flour right now so he was my taste tester.) Thanks and have a great weekend!

Best dish I ate this week – basil fettuccine with a tomato conserve and fresh ricotta cheese.
Best dish I made this week – Peanut Butter Pie. In fact, the recipe is soooo easy and makes TWO, so we still have some in the fridge!
Best meal I am making for “DAD” tonight – Rachel Ray’s Albondigas Subs, fresh from the Farmer’s Market salad, creamed corn AND Mary Helen’s amazing Lemon Freezer Pie.
Best dish I can’t wait to try – those CCCDB bars … maybe next week :)
