The Weekend Dish: 6/23/2012

This week we officially took the plunge into summer! It was only fitting that the lightning bugs showed up in full force this week; I love watching them light up the night sky. Isn’t it great that it’s been light well past 9pm the last week or so? The bad news is that now we’re on the other side of the slope when the days start to get shorter. Such a tease!

So, it seems that we may have gone a little overboard with the number of zucchini and cucumber plants that we planted. The flowers and budding zucchini and cucumbers are going crazy. I foresee a large amount of zucchini bread and pickling in my future! Feel free to share recipes in the comments below if you have some good ones! Aside from coming to grips with a massive harvest in the raised bed, my brain is completely occupied this weekend with the NHL Draft. Bonus that it’s taking place in Pittsburgh this year! Any other hockey fans following along?

    I love everything you made this week, I think bookmarked every recipe :) I am SO pumped about the draft, and already loving our 1st round pick last night! Looking forward to seeing what else happens before July 1. How are you feeling about the Staal trade?

      Crazy draft this year, at least from a Pittsburgh perspective, of course! Once Subban comes up through the system, those divisional games against Montreal should be a lot of fun! As for Staal trade… There was some stuff that got leaked at the end of the season, that he wasn’t thrilled with a limited role and ice time behind Crosby and Malkin, knowing he could probably be a #1 or 2 center somewhere else. Then on Thursday news leaked that the Pens offered him a 10-year $60M contract and he turned it down. Once that broke, I was pretty sure Shero would move him. I’m happy with what we got in return, but we’ll miss him. Trading Michalek back to Pheoenix for 2 prospects and a pick was definitely a salary dump. Pretty sure Shero is clearing cap space in an attempt to sign Parise and/or Suter/Weber. Sid and Parise are BFF, so fingers crossed!

    I totally agree with you about the days being longer and then all of the sudden they’re already getting shorter. It’s kind of depressing, but hopefully we have a nice, long summer ahead of us. I’m definitely intrigued by the Bacon Peanut Brittle. Do you make all of the recipes you bookmark? I know I probably have more than I’ll ever be able to make!

    The best thing I ate this week : Fudge pops from your web site. De-lish. Had one for breakfast, had one for lunch (that is legal when it is > 90 degrees, and you have no AC). Thanks for the great recipe!
