The Weekend Dish: 6/30/2012

Happy weekend! What a sweltering weekend it’s turning out to be, right?! This past week I made the first garden harvest – three zucchini! There are at least two to three more that will be ready to be picked within the next few days, I have two jalapeño peppers that need to be picked and at least another handful only a few days behind. There will be no shortage of zucchini recipes coming this summer, that’s for sure! If you have any favorites, feel free to share them in the comments below. Are you doing any 4th of July celebrating this weekend, or are you holding off for Wednesday? If you’re working on menus, be sure to check out the 4th of July category here on the site for some ideas. Have fun and be safe celebrating this weekend and next week!

As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!

4th of July Recipes 2012 – A roundup of recipes perfect for your 4th of July celebrations this coming week.

Homemade Graham Crackers – Another packaged favorite that I can cross off of my homemade list!

S’mores Ice Cream – Toasted marshmallow ice cream + fudge swirl + chunks of graham crackers = the most amazing ice cream you’ll taste this summer!

Red, White and Blue Firecracker Popsicles – A recreation of one of my favorites from the ice cream truck as a kid. Made from fresh strawberries, blueberries and yogurt, they’re 100% natural.

Cherry Pie – A classic cherry pie with a lattice-top pie crust. Post includes a step-by-step photo tutorial on how to make a lattice-top crust!

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like too:

Cheesesteaks (The Little Kitchen)
Even though Pittsburgh is arch-rivals with Philadelphia when it comes to hockey, I have always wanted to try my hand at cheesesteaks. This recipe from Julie is the first one to leave me completely craving them; I’m definitely trying it soon!

Chocolate Sheet Cake with Peanut Butter Frosting (Two Peas and Their Pod)
Maria and I are kindred chocolate souls… this cake has my name written all over it!

Cupcakes-on-Tap (Bake at 350)
Bridget made these cupcakes as part of her baking for dudes series, but I’m one gal who enjoys some beer, as well as chocolate… and frosting. Top everything with chocolate-covered pretzels? I’m in cupcake heaven!

Mexican Popcorn (Shutterbean)
My Chief Culinary Consultant and I make an awful lot of popcorn, and I’ve been wanting to try my hand at some homemade variations. I think this would be right up our alley, it sounds delicious!

Red, White and Blue Poke Cake (Tracey’s Culinary Adventures)
This is such a fun and festive cake! I especially love that the colors are made with completely natural fruit syrups – a definite bonus!

What was the best thing you ate this week??

Have a delicious weekend!

I like using zucchini to make Poor Man’s Crab Cakes. Unfortunately, my husband will not eat them.

Do you ever make pickles? I’m overrun with cucumbers in my garden this year and have already made pickles twice but need to keep going. So if you have any recipes featuring cucumbers (pickles or otherwise) I would love to see them!

    Thanks!
