The Weekend Dish 12/14/2012

Happy weekend to you! I can’t believe we only have this weekend and next weekend before Christmas is here. Suddenly it’s the midway point of December and I have not yet purchased a single Christmas present. This is totally unlike me… I’m usually very close to being finished, if not totally done. Now, I’ve been on a bit of a baking bender for the last week, so there is no shortage of cookies to eat. Those should fuel me during my last-minute shopping trips! Peanut Butter Cup Cookies – One of my favorite re-discovered recipes. A soft peanut butter dough is baked up, and then a miniature peanut butter cup is pressed into the center. One of the best cookies, ever.

Homemade Torrone – A classic Italian nougat candy loaded with almonds. I would have never thought to make these at home, and now I can’t imagine buying them ever again!

    I love the weekends, the only problem is I work every stinkin one!! oh well, I am of advanced age and only have 5 more years of work, thank the Lord…

    Thank you for doing the foot work (or finger work) in locating the brown sugar cookies and butter cookies with egg nog cream cheese icing. I am going to love baking those soon. I, too, have been on a baking bender, and will continue to be until Christmas with all of the recipes on my list. It just keeps getting longer. The best thing I’ve eaten this week are the Toffee Squares I made for a potluck, straight from Pioneer Woman’s “Cleta Bailey’s Toffee Squares” recipe. I posted them on my blog this week! Thanks again.

    The nougat candy looks delicious, as does everything else. I don’t think I’ve ever had that Italian confection. I will probably have to try making it myself, since I don’t recall ever seeing it in any shops.

    I will probably substitute the almonds with something else. Maybe cashews. Everyone who I would want to enjoy it does not eat almonds, and cashews are softer to chew. They also have a nicer flavor than almonds in some dishes. If I try it then I will be able to comment on its effect in this treat.
