The Weekend Dish 5/11/2013

Happy Saturday! How has the first week or so of May treated you? Here in Pittsburgh, it’s been sunny, warm and the flowers and trees are finally blooming. Yesterday it even smelled like summer. Isn’t it crazy how you can smell seasons? My absolute favorite is when I get that first sniff of fall air – it’s fabulous! Right now, though, I’m thrilled about the nice weather. My Chief Culinary Consultant and I are less than two weeks from closing on our house, so we’ve been busy bees trying to get things organized and ready for the move. The countdown is on!

As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!

On Brown Eyed Baker This Week

Chocolate Pavlova with Mascarpone and Raspberries – A light and airy chocolate pavlova has little melted bits of chocolate throughout and is topped with a mascarpone whipped cream and fresh raspberries.

Classic Buttermilk Waffles – Everyone needs an easy buttermilk waffle recipe for those extra-special mornings. You won’t believe that these mix up just as fast as waffles from a mix; and they’re much tastier!

Strawberry Swirl Cream Cheese Pound Cake – A moist, dense cream cheese pound cake with a strawberry swirl running through the middle. A perfect spring and summertime dessert!

Vanilla Bean Ice Cream – A must-have recipe for rich, creamy vanilla ice cream, complete with specks of vanilla bean.

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like, too:

Caramelized Banana Sticky Buns (Heather Christo Cooks)
I love a good sticky bun, but this caramelized banana version with pecans sounds over the top amazing! These would make a fantastic Mother’s Day breakfast.

Oreo Truffle Brownies (Chef in Training)
What an unbelievable idea – thin, fudge-like brownies topped with a layer of Oreo truffle mixture, then topped with a layer of chocolate. Pour yourself a big glass of milk!

Peanut Butter Overload Bars (Confessions of a Cookbook Queen)
If you love peanut butter (ahem, me), then these bars are going to be right up your alley. I can’t wait to make them!

Pistachio Almond Cake (Use Real Butter)
This is a beautiful three-layer cake – alternating layers of pistachio and almond cake are filled and iced with a whipped cream frosting. A wonderful special occasional cake.

Rum and Coke Floats (Cooking Stoned)
These just scream summer to me, plus rum and coke was my first “go-to” drink once I turned 21. Bottoms up!

What was the best thing you ate this week??

Have a delicious weekend!

Your recipes are all so great this week. I’d love a slice of that pound cake! The best thing I ate was a chocolate mousse-brûlée dessert with bourbon cherry sauce and blueberries. Holy smokes was it good!

Happy weekend! I love the chocolate pavlova idea. The best thing I’ve eaten all week was probably the pickled cauliflower at a new restaurant here in LA…

I love the smell of summer too! I finally got my hands on some peaches and every time I walk past the fruit bowl, I think of summer. How exciting about your house!
