Cream of Mushroom Soup

Again, I’m sorry, I’m such a bad hostess. I chose this recipe and then couldn’t even get it in by the deadline of last Thursday. My deepest apologies to Ina and all of the Barefoot Bloggers. However, I am SO glad that I made the time to whip this up. This soup is absolutely fabulous! It did take a little bit of time from start to finish (probably about 2 hours), but it was well worth it. This soup is so full of flavor and so much better than any canned soup you might buy.

I know, I’m horrible. I chose this week’s recipe - Cream of Wild Mushroom soup, mmm. And it’s not here. But due to some work craziness and getting ready to go away for the weekend and being tied up LAST weekend, I just haven’t gotten to this yet. It’s on the docket for next week, and I can’t wait to make it!! Be on the lookout!

Grown Up Mac and Cheese

This installment of Barefoot Bloggers was chosen by Heather of Randomosity and the Girl, and I could just give her a big hug for picking macaroni and cheese. I mean, really, who DOESN’T love macaroni and cheese?! And what are the odds that Ina Garten would create a mac n’ cheese that wasn’t freaking fantabulous? I have been making the same baked macaroni and cheese recipe for the past year or so, and this version wasn’t too terribly different, but it introduced some “grown up” flavor in terms of the types of cheeses used and the addition of bacon. This really was a fabulous recipe, it certainly lived up to the hype!

Panzanella

This latest recipe for our Barefoot Bloggers group was chosen by Melissa of It’s Melissa’s Kitchen. This was a wonderful choice for these last few weeks of summer, as it included many fresh vegetables and tasted bright and fresh. Traditional panzanella originates from the Tuscan region of Italy and the original dish includes just bread, tomato, basil, salt, pepper, oil, and vinegar. The dish has evolved over the years to include things such as vegetables, eggs, tuna, among others, and is sometimes referred to as a “leftover salad”, because, much like omelets, it’s easy to throw in any leftover vegetables you have laying around. The version we made this week included peppers, onion, tomato (which I omitted because I don’t like them), cucumber, basil, toasted bread, and dressed in a dijon vinaigrette. Absolutely delicious!!

Barefoot Bloggers: Jalapeno Cheddar Cornbread

This installment of the Barefoot Bloggers comes courtesy of Sabrina and Alexander of Cooking with the Kids, who have chose Ina’s Jalepeño Cheddar Cornbread, which is featured in the Barefoot Contessa at Home cookbook. I was really excited to make this, as it came from a cookbook I already own, and cornbread sounded so good, even though it wasn’t fall and I wasn’t serving it with chili! This is only the second cornbread recipe I have made (the first was made last fall and came from Cook’s Illustrated), but I have to say, this was phenomenal. It produced a light and tender crumb, a slightly crisp crust, and the inclusion of the green onions gave it a nice zip, and really, you seriously can’t go wrong with adding cheddar to anything!
