Potato-Bacon Torte

It is unlikely that I will ever utter a bad word about a dish that combines potatoes, bacon, cream, and buttery pie crust, and this torte is no exception. The only bad thing, really, is that it’s so fabulous you’ll be in danger of eating the entire thing by yourself. Multiple layers of thinly sliced potatoes and crispy bacon are given a healthy drink of thick cream, and encased in one of the flakiest pie crusts I have ever eaten. You tell me if you can think of anything not fantastic about that combination. I love the rustic nature of this dish – it’s simple yet hearty and satisfying; a meal that not only fills your stomach but also warms your soul. Some dishes just have that indescribable element, and this is one of them.

Eggplant Lasagna Tart with Parmesan-Basil Crust

There seemed to be a perfect storm of savory Italian tart recipes that landed in my inbox within the last month. I first saw a Zucchini Lasagna Tart and then a Fresh Tomato Tart not too long after. I saved both and kept looking at them again and again. I will be the first to admit that I have a problem when it comes to recipes. I save what seems to be countless recipes on my computer between my email inbox, Google Reader and bookmarks. Then there is the binder of recipes that have been clipped out of magazines and old ones of my mom’s and grandma’s that I want to try. And don’t even get me started on the 30+ cookbooks I own that don’t get near the attention they deserve. With all of these recipe repositories, it’s truly something special when I run across a recipe that sticks like glue in my head; when I find myself thinking about it over and over, plotting when the first chance might be to make it. It happened most recently with the Cream Cheese Cinnamon Rolls and Better-than-Brownies Chocolate Cookies I made, and it happened with these tarts.

Chicken Pot Pie

The extent of my experience with chicken pot pie had only been a recipe that my grandmother shared with me a few years ago. It was really good. Really, really good. It also included about half a box of Bisquick. I kid you not. Now that fall has arrived, I began craving your typical comfort foods, including chicken pot pie. Not really wanting to use so much Bisquick, I went out in search of a more authentic version of this classic recipe. I seemed to hit the jackpot with this version from Williams Sonoma and although an authentic recipe would include a traditional pie crust, puff pastry is seriously one of the best things ever.
