Apple Hand Pies

Apple Pie: rustic, flaky, tart, and spicy. The most iconic of American traditions.
These marvelous little pies package up the best parts of apple pie, eliminate a lot of the work, and deliver scrumptious, addictive fruit-wrapped-in-crust that can be stowed away in your pocket for safe keeping. Hand pies have been making their way around the blog universe since the beginning of summer, it seems, and I’ve been meaning to make them but never quite got around to it. So when Annie asked if I was interested in making the Bourbon Peach Hand Pies that were featured on smitten kitchen, I was intrigued. While I’m not much of a peach fan, I figured I could use Deb’s dough recipe and sub in my own apple filling, which is what I did.
These hand pies are a fantastic option for changing up the traditional slice of pie and ice cream and would be especially welcome as a dessert at an outdoor gathering or one that included small children. And really, for the kid in all of us - what’s much better than a slice of apple pie that you can pick up and carry around with you?

Chicken Pot Pie

The extent of my experience with chicken pot pie had only been a recipe that my grandmother shared with me a few years ago. It was really good. Really, really good. It also included about half a box of Bisquick. I kid you not. Now that fall has arrived, I began craving your typical comfort foods, including chicken pot pie. Not really wanting to use so much Bisquick, I went out in search of a more authentic version of this classic recipe. I seemed to hit the jackpot with this version from Williams Sonoma and although an authentic recipe would include a traditional pie crust, puff pastry is seriously one of the best things ever.

Fresh Blueberry Pie

Everyone seems to go crazy for blueberries and strawberries around the 4th of July holiday, so it seemed like the perfect weekend to whip up a blueberry pie with one of my favorite people, Annie. Annie, by the way, appears to be superhuman - she gave birth only a little over 2 weeks ago and has been in the kitchen whipping stuff up left and right. She is definitely my hero! I have only made pies twice before and was anxious to give it another go and, more importantly, I wanted to try making a lattice top. After finally settling on a recipe, we were off to gather blueberries and assemble this beautiful pie!

TWD: La Palette’s Strawberry Tart

This week’s selection came from Marie at A Year in Oak Cottage, and it was a perfect pick to top off four days of 90-degree plus weather. Nothing screams summer quite like strawberries! This recipe was described by Dorie as a rustic type of tart, with strawberry jam spread on the tart and each person piling on as many strawberries as desired from a big bowl served in the middle of the table.

TWD: Fluted Polenta Ricotta Cake

This week’s recipe selection comes to us from Caitlin over at Engineer Baker. I have to be completely honest - at first glance, this recipe didn’t seem all that appealing to me, but my mom and grandma thought it sounded fantastic, so I decided to make it and give it to them to enjoy. As I was putting the cake together, it smelled absolutely fabulous! Definitely a distinct Mediterranean aroma, and as it baked the smell only got better.
