Welcome to the second round of “Oldies But Goodies”, which I started last month in an attempt to share older, oft-forgotten recipes from the depths of my archives. It was very well-received among readers so I am forging on and will continue to post these round-ups on the last day of each month, highlighting the older recipes that I have made during the month. As you will see, this was certainly the month of the cookie! Lots and lots of cookie recipes, and quite a few from back when the site was quite new, so I’m sure you’ll discover some new recipes in this list. Enjoy!

Pizzelle (Italian Waffle Cookies)

I absolutely love pizzelles, and they are a staple in most Italian households. They are popular around the Christmas holiday, but with Easter coming this week, they are heavily requested! For a great anise version, use 1 teaspoon of anise oil (you can buy little bottles at drug stores) in place of the anise extract.

Yet another traditional Italian baked good, every day is a good reason to make biscotti. There are so many different varieties you can make and there are quite a few on this site (Cranberry-Almond, Chocolate-Pistachio, and Black Pepper-Parmesan, to name a few), but this is a basic recipe you can tweak to your liking. Add a 1/2 teaspoon of anise oil for great anise biscotti!

This is an old recipe of my Grandma’s that she used to make each year for Thanksgiving. A tender and flaky pastry dough is rolled out and spread with a sweet walnut filling, then rolled up and sliced into individual cookies. Almost like mini-nutrolls. Absolutely delicious!

These cookies made their debut during the Stanley Cup Finals last year, and I have made them a few times since them. I had a request for them this week, as well as some Pittsburgh Steelers jersey sugar cookies. I also made Shamrock Cookies this month, and Easter egg cookies are on the way!

(Really need a new photo of this!) This is my all-time favorite baked pasta dish. I created it a few years ago and continue to enjoy it. Recently I made it for family that came over to celebrate my 30th birthday. The secret is little cubes of mozzarella that create cheesy pockets throughout the pasta!

I have been making these cookies for almost as long as I can remember, probably back to my high school or college days. The dough is sweet, tender, and flaky and studded with chocolate chips. Super easy, and unbelievably melt-in-your-mouth delicious!
