The Weekend Dish: 1/30/2016

Happy last Saturday of January!

One whole month of this new year is already in the books, crazy! What do you have planned for this weekend? I’m spending some time in the kitchen today and we’re having our usual Sunday dinner tomorrow (and celebrating my father-in-law’s birthday!). I’m hoping to pick up work on Joseph’s rainbow blanket, too! It’s the never-ending crochet project!

As always, you’ll find a recap of what was posted to the site this week, the most shared recipes, my Sunday dinner menu, and recipes I’ve bookmarked from other blogs. Enjoy!

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like, too:

All-Dressed Kale Chips (Oh She Glows)
I made this recipe last weekend and these kale chips are amazing! My husband gave me the side eye when I told him I was making kale chips, then he tried one and was astounded at how good they were. Light as air, super crispy and tons of flavor!

Double Chocolate Copycat Kit Kat Bars (Boulder Locavore)
Yes, yes, yes! Love Kit Kats, totally want to try these.

Dulce de Leche and Chocolate Mousse Jars (Gastro Senses)
Could this title be any more drool-inducing? Take a look at the pictures!

Howsweeteats House Salad (How Sweet It Is)
Another one I made this week to spice up my boring lunch salads. I subbed cucumbers for the tomato, bacon for the pepperoni, added chicken, nixed the cheese and croutons (still on the Whole30), and LOVED it! So much flavor and such a great change of pace!

No-Bake Black Forest Icebox Cake (The Recipe Rebel)
I have such a soft spot for icebox cakes because my grandma used to make them all the time, and this one looks so incredible.

Have a delicious weekend!

I’m baking your gingerbread pound cake for the third time this weekend! So glad to hear you are continuing with your rainbow blanket too, can’t wait to see it!
    Have a great weekend : )

Those cupcakes look insane! But how do you eat them while on the Whole 30? Curious how you balance b/c it’s something that I struggle with – sweet tooth with wanting to eat healthy… Thanks!

Hi Sally, They are an old recipe that I’ve had before, so I just served them this time around, didn’t sample 🙂

Ah, got it! I guess I meant in general though – if you’re baking new sweet recipes, how do you balance tasting/sweet tooth with healthy eating?

Hi Sally, I usually make the bulk of my recipes to serve at Sunday dinner so there are a lot of people to sample; I will have a little bit, and then usually send whatever is left home with our guests so it’s not sitting around here 🙂

THANKS! That does allow for great portion control.

Taking a short road trip today and then tomorrow will be about resting, watching the Pro-Bowl or whatever the heck it’s called now and maybe baking something – not sure what yet.

Loved the video of Joseph walking yesterday! Just seems too little to be walking! Snowing in my neck of the woods — have family coming over so looking to bake/cook something — maybe in crockpot. Loved the pork and gnocchi recipe you put out a few weeks ago. Might have to go with that again! 🙂 Happy Weekend!!

Those espresso mocha cupcakes were my favorite!
