Happy weekend to you!

I hope you had a fantastic week and your weekend is off to a great start! I’m thrilled because I’ve had things to do the last two Saturdays, and today is wide open. I’m looking forward to some down time and kitchen time without having to be anywhere. What are your plans?

    Would your father in law share his recipes? That’s one of my husbands favorite dishes and I’ve never quite found a recipe that we just love! Something tells me his would take care of that problem. I love when you post your Sunday dinners. Is it odd when things are still “tbd” and I spend time wishing I knew what you were having?! I think we may need to start this tradition in our family.

    I saw the Magic Custard Cake recipe a couple of months ago and bookmarked it, but haven’t made it yet. I’ve also seen nutella, butterscotch and lemon versions.

    In October you bookmarked Real Deal Caramel Cake. I thought it looked wonderful, especially the icing, but had no desire to make a 3 layer cake. Shortly afterwards I saw another caramel cake recipe which yielded an 8×8 cake, but the icing didn’t appeal to me. So I combined the two recipes. I made the 8×8 cake and the icing from the recipe you bookmarked (I cut the icing recipe in half). It was delicious and I’ll be making it again.

    Beyond cookies, bar cookies (your Maple Date Bars) and brownies, I’m not much of a sweets baker. But these simple smaller batch cakes are calling my name.

    Eggplant Parm!! I’d have to say this is one of my top favorites as well. I grew eggplants in my garden for the first time this past summer, so this dish takes on all new excitement for me. Can’t wait to grow them again this year . . . just a few short months the garden will be in and hopefully thriving ;). Here’s to hoping your father-in-law will share his recipe with us 🙂 AND, would you do a post & share your garlic rolls? There’s a restaurant on Route 8 that makes delicious garlic knots – could eat them by the dozens!! Your meat dish should be good ol’ meatballs 🙂 Nothing like eggplant parmesan, garlic bread/rolls and meatballs in a delicious homemade red sauce. Is there room at your table this weekend for someone to squeeze in? 😉 Have a great weekend!

    I haven’t had Eggplant Parm in years! Would love to see a picture of your father-in-laws and the recipe if possible – would love to make some soon. The Snickers Cupcakes look amazing and I need to try them…I’m going to check out the Custard Cake too..sounds yummy. Have a great weekend!

    Hubby and I are spending the weekend with our 8 year old grandson.
    Going to the movie ZOOTOPIA this afternoon.
    Grandkids are the best! (ask any grandparent!)

    Oh your Sunday dinner sounds amazing! And those Crunch Bars, they are one of my husband’s favorites so I’m definitely trying those for Easter! Thanks for sharing my fried chicken. I rarely make it but drool over it often, haha. Hope you had a nice relaxing Saturday.
