The Weekend Dish 4/13/2013

Happy Saturday to you all! I hope you’re doing something fun this weekend and are enjoying some nice spring weather! My Chief Culinary Consultant and I are headed back down to the Frozen Four tonight to catch the championship game between Yale and Quinnipiac. I’m looking forward to stuffing myself with yet another soft pretzel and catching some great college hockey. Then, I’ll likely spend tomorrow watching the final round of The Masters. It’s a sports-centric weekend, for sure! What are your plans?

As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!

On Brown Eyed Baker This Week

Banana-Macadamia Nut Muffins – Moist banana muffins loaded with macadamia nuts; they taste just like banana-nut bread!

Creamy Mushroom-Fontina Pasta – A fabulous pasta dish made of a simple sauce with cremini mushrooms and Fontina cheese.

Beer-Battered Onion Rings – Quite possibly the best onion rings ever! Sweet, not too biting, and a wonderfully crisp batter.

Snickers Cake – A cake in memory of what would have been my dad’s 60th birthday, fashioned after his favorite candy bar.

Friday Things – My dad’s birthday, Frozen Four, eagles, Clarisonic, Diet Coke and more!

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like, too:

Breakfast Corn Dogs (High Heels & Grills)
I absolutely love corn dogs, as well as pancakes with breakfast sausage and maple syrup. I’m all over these breakfast corn dogs!

Cannoli Bites (Cooking Classy)
Cannoli are fabulous, but they’re definitely a lot of work. These cannoli bites are still made from scratch but take some of work (and frying) out of making cannoli – awesome idea!

Pretzel Challah (The Shiksa in the Kitchen)
I’m not sure what else I can say about this bread that would make you run any faster into the kitchen to make it. I can’t even imagine how amazing this bread is.

Roasted Garlic and Parmesan Beer Cheese Dip (The Beeroness)
If there’s a beer-cheese dip in the vicinity, count me in for at least half of it. I love the addition of roasted garlic to this one.

Sausage Egg Rolls (Buns In My Oven)
I discovered a love for egg rolls a few years ago and now if I see them on an appetizer menu I’m immediately drawn to them. This sausage-based version is making me hungry!

What was the best thing you ate this week??

Have a delicious weekend!

I am so very lusting after that cake!
Best thing I did eat in this last week was a “naked” vegetarian tamale from a Mark Bittman recipe!

I baked a cheesecake with some mandarin orange rind in it, and served it with fresh strawberries.

It’s Sunday night here now, yesterday I did some organising of our dining room, including most of my cookery books, and did some tidying and sorting (oh my goodness, I even discarded some things!). No fancy cooking though. Today, finally got a ride as passenger in my husband’s auto-cross race car (dirt track racing), which was a blast, after waiting so long! Next step, I drive! Tonight, made my easy butterscotch pudding for dessert, for something a bit special. And that snickers cake looks soooo rich!
