The Weekend Dish: 6/4/2011

How has the first week of summer weather treated all of you? Did you take your inaugural trip to the local ice cream shop yet? Get your garden started? Once again this year I am just doing some containers out on the deck. Last year I started with herbs and grew rosemary, thyme and basil, all of which thrived. This year I am doing those again, and adding mint, cilantro, and Italian parsley, and also jalapeño and sweet banana pepper plants. My first vegetables, I’m so excited! Once I get them potted and ready to go I’ll be sure to snap some pictures and share them with you!

I am highlighting this recipe because I actually made the lamb last weekend and it was phenomenal! The spice rub is a perfect blend of flavors, and the lamb so buttery and tender. We skipped the mint sauce and had it with mint jelly. I highly recommend!

Red Velvet Cake Ice Cream (My Kitchen Addiction)
I adore homemade red velvet cupcakes and this is the perfect excuse to make a batch. I can only imagine how delicious this ice cream tastes!

Salted Chocolate Covered Caramels (These Peas are Hollow)
Salted caramels are delicious on their own, but covered in chocolate? Surely heaven.

    Im a horrible gardener – funny story…I tried to plant a bunch of herbs in my boyfriends yard with no success. The wind blew them all out of the pots and they all died. The following year I went to the back yard to play with the dogs and it reeked of mint! I googled what could have happened and it informed me that mint is like a crazy weed if its not contained. Apparently when they all blew away it spread like a wild fire and now his back yard is loaded with mint. Oops….so be careful with your mint! lol

    We did a raised bed garden this year. With only 6 banana pepper plants, we already have them coming faster than we can eat them. I’ve never canned, but may try to. Tomatoes, Squash, Okra, Onion, Cucumber… all still a growing!!! Can’t wait… I LOVE having a garden.

    While I have to mostly take it easy this summer, I’m so relieved that I got my garden planted before my surgery… It’s wonderful seeing all of the plants growing, and I’m really excited about picking the first peppers and tomatoes of the season (hopefully soon!).
