The Weekend Dish: 8/25/2012

Happy happy weekend!

This has been a crazy bizarre week. I just looked at my recap below and I feel like I made that chocolate cream pie weeks ago, when in actuality, it was less than 5 days ago. I may have entered a time warp while wrapping my head around the nearly 4-week road trip my Chief Culinary Consultant and I are about to embark on. We’re leaving this coming Wednesday and will spend a long Labor Day weekend in Orlando at Universal Studios, then head to south Florida to his parents’ for the bulk of our trip, then shoot up to D.C. for a long weekend with friends and a couple of concerts (Madonna!), and then pull back into Pittsburgh the last week in September. Whew! I’m excited, but lots to do before Wednesday! Primarily, I need to figure out how not to pack my entire closet. Wish me luck! 😉

On Brown Eyed Baker This Week

Shrimp Nacho Bites – Little individual nacho bites full of shrimp, black beans, corn, avocado and all the fixin’s.

Chocolate Cream Pie – The perfect combination of Oreo crust, chocolate pastry cream and freshly whipped cream. Pie has never been so good!

Chocolate & Peanut Butter Cheesecake Bars – I pulled together the trifecta of chocolate, peanut butter and cheesecake for these bars. Easier and faster than cheesecake, they’re irresistible.

Pretzel Dogs – I only eat hot dogs if they’re charred on the grill or wrapped in soft pretzel dough. I was way overdue for making a soft pretzel version at home; love these!

Peach Strudel – I always thought that strudel was a very long, involved process. I was thrilled to find that I could make an awesome strudel within an hour. Love the sweet peach filling and all those buttery, flaky layers of pastry.

Andes Mint Chip Ice Cream (Love & Olive Oil)
I have been in love with Andes mints since going to the Olive Garden as a kid. I can only imagine how much better this is than regular mint chocolate chip ice cream!

Broccoli Mac and Cheese (White on Rice Couple)
I’m looking forward to trying some new homemade macaroni and cheese recipes this fall, and I love this. For the longest time, I would only eat broccoli smothered in cheese, so it seems rather fitting for me 🙂

Brown Butter Banana Waffles (Two Peas and Their Pod)
I don’t make waffles nearly often enough; this recipe is the kick in the pants I need to bust out the waffle maker more often! These sound like an amazing breakfast treat.

Homemade Animal Crackers (Confessions of a Cookbook Queen)
When I was in high school, I was obsessed with iced animal crackers. I don’t think I’ve eaten them since, but you better believe I’m running to make these as we speak.

Spicy Roasted Corn and Poblano Soup (How Sweet It Is)
Yesssss! Soup! Fall is so close I can smell it. I have a feeling this soup is going to be made over and over this fall and winter. Love the spicy!

    Hey girl!! Have a safe trip!! I live in Tarpon Springs, Florida and the weather is getting ready to change. I’m sure you’ve heard about the storm coming here and I know your going to Orlando first but please be careful anyway!! We are moving up to PA on Sept 16th…we will be living in Lake Ariel. I’ve only seen pictures but it looks beautiful there. Hope you get to see and do lots of cool and awesome stuff!!

    You probably already know this….but invest in space bags. I just brought my son to college and we were able to use just one car! It really squeezes all those clothes down to nothing! The down side is you need access to a vacuum to repack! Have fun! I am sure you will delight us with pictures of your travels.

    Make a list of small accessories that you may need as you tour Universal Studios. It can be a very noisy place, and some of the attractions are deafening, so bring along some earplugs for everyone in the family. Sunscreen is an absolute must, as are hats to protect you from the sun. Leave your purse at home or locked in the trunk, and use a fanny pack or backpack instead. There are also lockers available through guest services if you need a secure, dry place to store your belongings while you have a blast in the park.,
