Happy happy weekend!
This has been a crazy bizarre week. I just looked at my recap below and I feel like I made that chocolate cream pie weeks ago, when in actuality, it was less than 5 days ago. I may have entered a time warp while wrapping my head around the nearly 4-week road trip my Chief Culinary Consultant and I are about to embark on. We’re leaving this coming Wednesday and will spend a long Labor Day weekend in Orlando at Universal Studios, then head to south Florida to his parents’ for the bulk of our trip, then shoot up to D.C. for a long weekend with friends and a couple of concerts (Madonna!), and then pull back into Pittsburgh the last week in September. Whew! I’m excited, but lots to do before Wednesday! Primarily, I need to figure out how not to pack my entire closet. Wish me luck! 😉

Shrimp Nacho Bites – Little individual nacho bites full of shrimp, black beans, corn, avocado and all the fixin’s.
Chocolate Cream Pie – The perfect combination of Oreo crust, chocolate pastry cream and freshly whipped cream. Pie has never been so good!
Chocolate & Peanut Butter Cheesecake Bars – I pulled together the trifecta of chocolate, peanut butter and cheesecake for these bars. Easier and faster than cheesecake, they’re irresistible.
Pretzel Dogs – I only eat hot dogs if they’re charred on the grill or wrapped in soft pretzel dough. I was way overdue for making a soft pretzel version at home; love these!
Peach Strudel – I always thought that strudel was a very long, involved process. I was thrilled to find that I could make an awesome strudel within an hour. Love the sweet peach filling and all those buttery, flaky layers of pastry.

Spicy Roasted Corn and Poblano Soup (How Sweet It Is)
Yesssss! Soup! Fall is so close I can smell it. I have a feeling this soup is going to be made over and over this fall and winter. Love the spicy!
