The Weekend Dish: 8/4/2012

Happy weekend, everyone! I hope you’ve all had a great week that included some fun and good food. Can you believe it’s August already?! How did the last month of summer creep up on us like this? This summer has absolutely flown by! At least August brings us National Peach Month – they’re in their prime and begging to be used up in all sorts of awesome baked goods. I can’t wait to get my hands on some of those sweet beauties.

Have you been watching the Olympics? I have been pretty much glued to the events morning, noon and night, and going to bed much too late on more than one occasion. I just can’t get enough! I love watching the swimming and gymnastics, but this year I’ve been watching a lot more events. Who knew water polo was such a crazy violent sport?! I’ve really been enjoying watching everything, and it’s been a great change of pace while summer TV is in a lull 🙂

As always, you’ll find a recap of what was posted to the site this week as well as some bookmarked recipes from other blogs. Enjoy!

On Brown Eyed Baker This Week

Homemade Choco-Bliss Snack Cakes – A recreation of one of the best Hostess snack cakes of the 80’s. Totally worth the homemade effort!

Homemade Tropical Trail Mix – I love making granola and trail mix at home; this one combines some of my favorite tropical flavors with almonds and pistachios. Substitute your favorites to make it your own!

Bacon, Egg & Hash Brown Grilled Cheese Sandwich – One of the best sandwiches I have ever made. Perfect for breakfast, lunch or dinner!

Chocolate-Chocolate Chip Cookie Dough Ice Cream – A spin on one of my favorite ice cream flavors… if you’re a chocolate lover you won’t want to miss this!

Rocky Road Chocolate Bark – Who says rocky road is just for ice cream? This super easy bark only has 3 ingredients and can be whipped together in under 10 minutes.

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like too:

Chocolate Fudge Zucchini Cookies (Two Peas and Their Pod)
These cookies look so moist and fudgy, and are a perfect way to use up any extra zucchini you have!

Coffee-Chipotle Pulled Pork (Tracey’s Culinary Adventures)
I have yet to make pulled pork, but I foresee this recipe being made on many Sundays during football season come fall!

Funfetti Icebox Cake (How Sweet It Is)
My grandma always made a simple icebox cake with graham crackers and vanilla pudding. This cake batter-flavored pudding and sprinkles looks outstanding!

Oreo Stuffed Bundt Cake (Bakers Royale)
This cake looks like a dream. I can’t pass up anything chocolate with Oreos!

Puppy Chow Krispie Treats (Cookies & Cups)
Do you know about puppy chow? You take Rice Chex, coat a whole bowl with melted chocolate and peanut butter, and then dust it with powdered sugar. It’s super addicting. This Rice Krispies treat version looks insanely good!

What was the best thing you ate this week??

Have a delicious weekend!

I made Tracey’s pulled pork yesteday for my parents (I also made her jalapeno chedder buns). Huge hit! Word of warning: it feeds a crowd!
