The Weekend Dish: 9/1/2012

Happy long Labor Day weekend! I hope you all get to enjoy a little extra time off this weekend to relax and do something fun! As I mentioned last week, I’m down in sunny Florida for an extended getaway before heading up to D.C. to see Madonna, Metric and catch up with some of my Chief Culinary Consultant’s friends. I’m planning to relax, do some great eating, play tennis, and enjoy the warm weather before getting ready for fall back home. What do you have planned for the long weekend?

On Brown Eyed Baker This Week

Malted Milk Chocolate Chip, Peanut & Pretzel Oatmeal Cookies – I took cookie dough, threw in malted milk powder, and then proceeded to lose my mind adding ingredients. The result is one of the best cookies I’ve made to date. Note to self: allow yourself to go crazy more often!

DIY: Homemade Yellow Cake Batter Mix – I can’t express how thrilled I am to have an alternative to box cake mix when a cake batter-type recipe calls for cake mix. This took 5 minutes to make and it’s all-natural!

Ginger-Peach Granola Squares – One more last-minute peach recipe before they’re out of season! Crunchy granola is transformed into bars with a ginger-infused peach filling.

Apple Pie Ice Cream – It’s apple pie a la mode all rolled into one! A little bit summer and a little bit fall, this ice cream is packed with pureed, cooked apples, cinnamon and chunks of snickerdoodles.

I can’t believe I’m still picking zucchini from the garden. I swear the stuff is on steroids! I’m always on the lookout for new, different zucchini recipes and this one sounds amazing. My family loves fritters, so I’m definitely planning to whip these up.

    The most delicious food I ate this week was the homemade Turkish cuisine a coworker brought in. She made a bulghur salad, an assortment of vegetables in phyllo dough, and stuffed grape leaves. It was awesome.

    I just wanted you to know I made your chewy granola bars and mailed them off in a care package to my son away at college. They were a big hit.

    Glad you made it down to Florida safely, enjoy your vacation 🙂 Thanks for including my fritters, they were SO much better than I anticipated they would be.
