Apple & Cheddar Pupcakes for Einstein’s 4th Birthday!
Happy 4th Birthday to my golden retriever, Einstein!
Every year I bake him a little something special (and dog-friendly) to celebrate his birthday. This year I decided on these super cute apple and cheddar “pup”cakes. The original recipe includes a cream cheese frosting, but I honestly didn’t think it was necessary. Cupcakes on top of regular food is more than enough for this 70-lb furball. Maybe that makes these more of a muffin? In any case, he more than approved and thoroughly enjoyed his birthday treat(s) and begged for more. Then again, he’s not exactly hard to please when it comes to food!
He kept a very close eye on the entire baking process. I’m pretty sure he somehow realized these were for him.
The furry guy has had quite a good year by dog standards. Some highlights:

Apple & Cheddar Pupcakes
Ingredients
- 1½ cups (187.5 g) all-purpose flour
- ¼ cup (20.25 g) traditional rolled oats
- 2 teaspoons baking powder
- ½ teaspoon (0.5 teaspoon) baking soda
- ½ cup (122 ml) applesauce
- ½ cup (125 ml) water
- ¼ cup (54.5 ml) vegetable oil
- 2 tablespoons honey
- 2 eggs
- 1 apple, peeled, cored and minced
- 1 cup (113 g) grated cheddar cheese
Instructions
- 1. Preheat oven to 400 degrees F. Line muffin tins with paper liners.
- 2. In a large bowl whisk together the flour, oats, baking powder and baking soda. In a medium bowl, whisk together the applesauce, water, oil, honey and eggs, then stir in the apple and cheese. Add the wet ingredients to the flour mixture and stir until just barely blended.
- 3. Spoon the batter into the muffin tins, filling almost full (you may have a couple spoonfuls of batter leftover). Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool in the tins for a few minutes and then remove to a cooling rack to cool completely.

I am still processing apples from this summer. A person can only have in their pantry so much apple jam or applesauce, take and bake apple crumble or apple pies or applesauce in freezer (ran out of canning jars – oops). Still looking at 2 1/2 boxes of Winesap, Golden and Red Delicious to process so thought — “What would the Brown-Eyed Baker do?” and your dog Einstein came to mind. Plan on making these tomorrow and using mini-cupcake cups and then making room in my freezer :) Thanks to your recipes our dogs have their own freezer shelf — plus bags for my friends pups — arf arf . I made these for my Basset Hound Roscoe who celebrated his 10th birthday and they were just awesome. I used whole wheat flour because I have it for when I make him dog biscuits. The only changes I made was to add about 1/4 cup of bacon bits and I used a couple of tablespoons of brown sugar since I didn’t have honey. I frosted them with peanut butter and stuck a dog biscuit in each one. They turned out wonderful and both of my bassets love them!!! Thank you so much for this easy recipe. Einstein is adorable!!!
Would you use an icing on these? If so what kind? Maybe a cream cheese frosting…

Your beloved poochie is beautiful, and obviously well-cared for. Good for you, and for him. I love to see people treat their pets the way they would their family, for they truly are family. That last picture really made my day … great shot. Really looks like he’s soaking in the warmth of Christmas (but in reality is just loving the full feeling from your yummy cooking!)

I have a cute mongrel named Lola (born 21 feb 2012) and I must say that she has the same exact expressions and poses that Einstein has in all the photos here.
She loves cakes and the simple Marie Biscuits but does not enjoy store bought dog biscuits. I am going to try making the biscuits according to your recipes. Thanks for sharing and letting us enjoy your love for Einstein.
These were so good! And the fur babies loved them too ;) ! I had to yell at my boyfriend to stop eating the dogs’ birthday treats. Great, easy recipe that I’ll have to make again and again!

I make these pupcakes (a mini version) for a craft fair at my church – made them with the frosting the first year and it was really messy and as you mentioned, unnecessary. They sell out every year! My four dogs love the mistakes!
I found you blog via Pinterest and your picture of Einstein watching the Christmas tree. We adopted a 6yr old Golden this year after our 13yr old black lab passed away. Scruffy has been a balm to our hearts..I’m looking forward to making him some Pupcakes too! :-)

Happy Birthday Einstein. He is SO handsome! I just put these Pupcakes in the oven for our Old English Sheepdog, Nana, who just turned 9. She is the LOVE of our lives, and I was so glad to bake her a special treat.
