Gazpacho
[donotprint]
We all know that I am most definitely not the queen of vegetables. I’m barely the princess of semi-healthy. But I’ve been trying. Really, I have. I’m making a concerted effort to eat more vegetables because I know they’re ultra good for me. And in doing so I’ve been experimenting with different dishes in an attempt to get my taste buds digging some veggies. Now that it’s getting warmer I thought that gazpacho would be a great dish to try. All of the vegetables in it are vegetables that I don’t necessarily hate, so that was a good first step. Chopped into itsy bitsy pieces? Even better! I am happy to report that this might just be the key to significantly upping my daily vegetable intake.
The aroma of this gazpacho is positively intoxicating. It’s so fresh, you almost feel healthier just smelling it.
I bought my vegetables from my local supermarket, and can only imagine how infinitely better this would be with fresh-picked vegetables from your own garden. It makes me want to go out there right now and start tilling soil! I will definitely keep this stocked in the fridge this summer to make sure I keep eating my veggies :)

Gazpacho
Ingredients
- 2 cloves garlic, minced
- ½ (0.5) red onion, diced, divided
- 1 large cucumber, diced, divided
- 5 Roma tomatoes, diced, divided
- 1 zucchini, diced, divided
- 2 stalks celery, diced, divided
- 1 dash salt, to taste
- 4 cups (972 ml) tomato juice, divided
- ¼ cup (54 ml) extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons white sugar
- 6 dashes Tabasco
- 1 dash black pepper, to taste
Instructions
- 1. In the bowl of a food processor or in a blender, combine the minced garlic with half the red onion, half the cucumber, half the tomato, half the zucchini, half the celery, half the tomato juice, and all of the olive oil, red wine vinegar, sugar, Tabasco, and salt.
- 2. Pulse until all ingredients are blended well; mixture will have a nice speckled, colorful texture.
- 3. Pour into a large bowl and add the rest of the tomato juice, and half of the remaining onion, cucumber, tomato, zucchini, and celery. (Reserve the rest of the diced vegetables for garnish.)
- 4. Stir mixture together and check seasonings, adding salt if needed. Chill soup for at least 2 hours.
- 5. Remove the soup from the refrigerator and stir. Ladle into a bowl and garnish with remaining diced vegetables, a sliver of fresh avocado, sour cream, and cilantro. Serve with grilled bread or toasted baguette.

This is a NOT gazpacho. I can not understand why you think a soup where you add sugar and processed tomato juice, that probably contains sugar , is healthy. REAL gazpacho is made out of fresh tomatoes, peppers, cucumber, and a bit of onion and garlic, finished off with a bit of vinegar, olive oil, salt and pepper. You just liquidise those things with a bit of cold water and real bread (not sandwich bread). The sugar, courgette, celery, tabasco…whatever may make it into your own tomato soup recipe, but don’t call it gazpacho, because it’s not.
I first had gazpacho in Barcelona, Spain eons ago and fell in love!! All my favorite summer foods in a bowl or even a large glass with a celery stalk. They add a handful of small dice of the veges as a topping. Since then I started subbing V8 juice and recently added bloody Mary mix in place of or mixed with V8.
Seriously the best gazpacho I’ve tried! I added roast corn to it…just wonderful!
Absolutely delicious! Today I’m making it as a surprise for my hubby who used to be vegetable hater, but became obsessed with them after trying this gazpacho :)
I’m a HUGE fan of gazpacho. It’s a drinkable salad. I do like a little bit of chunkiness to it though so I can bite into some crisp cucumber and green pepper. I agree with the smell too; you feel healthier just putting your face over the bowl. Yours looks perfect, absolutely wonderful.
I’m with you, I am not a big vegetable fan. BUT I too am trying to up my intake. And this soup would be a great way to do so!
I’m not usually one for gazpacho, but this looks incredibly appealing! I think I may need to whip up a small batch for myself tonight!
I made this last week. It is like eating a bowl of summer! Thanks so much for the recipe. Only changes I made were to reduce the olive oil to about 2 T. and leave out the zucchini (didn’t have any at that time) and hot sauce (kids don’t like it). I’m going to make this and use it to reach my goal of eating more vegetables.
I love a good gazpacho. I once had one that was all white – grapes and white veggies and it was excellent. This looks good too. I am also trying to put more veggies in things. Tonight we had tomatillos, onions and avocado.
That dish, although can be considered a kind of gazpacho , is called ‘ajoblanco’ in case you want lo look for the recipe.
This looks really refreshing. I have never tried gazpacho before but you pictures are really tempting
Michelle: Gazpacho is one of my very favorite summer meals! Once I start, I find it is addictive and I can eat it for almost every meal! I plan my garden planting for growing the ingredients for homemade gazpacho, salsa, and chile verde.
I really look forward to trying your recipe — I’ve never had gazpacho with zucchini in it, so I look forward to trying that addition!
You might want to try this with Rice Vinegar — to me it seems to give a lighter flavor.
I’ve always wanted to make gazpacho. Yours looks so fresh and healthy! Definitely will try this!
Gazpacho is one of the very first things we make when the fresh veggies start rolling in and we usually keep a pitcher of it int he refrigerator all summer. It’s so refreshing for a summer lunch. Yummy recipe and lovely photos!
I’ve been juicing vegetables for the last couple of days and was just thinking of looking for a Gazpacho recipe. Thank you very much.
I’ve always wanted to make this. Great recipe!
I just bought all the veggies to make gazpacho last night! (We’re in Synch!!) Yours looks delish- this is one of my favorite go to lunches in the summer. So refreshing and fresh!
This looks so fresh and delicious! Perfect for summer.
Wow! I would have never thought it was that easy. I love veggies and this sounds yummy. Bookmarking this one :)
Gazpacho is one of my very favorite foods for hot summer days. Yours is absolutely beautiful!! :)
I’ve always wanted to prepare gazpacho and your recipe sounds delicious! Can’t wait to make it! Maybe this Sunday, after the farmer’s market. Thanks for sharing this and those wonderful photos.
There must be something wrong with me since I love vegetables a lot, and just steamed no butter, oil etc requred. Don’t get me wrong, I love those too, but steamed carrots, broccoli, asparagus are all favourites of mine, and I would take those over a gussied up version any time. I’ve never had gazpacho before, never really thought about it, but I’m really excited to try it now (your top picture is mouth watering).
i had an outloud gasp when i saw this on FB feed. I love gazpacho, i first fell in love when I was spain. I can’t wait to make this recipe. Thanks for sharing.
If you loved it when you were in Spain, please find a Spanish recipe. This is a tomato soup with different ingredients, it will not taste the same.
You made me chuckle. I used to chop up veggies to get someone to eat them…but they were 2! :)
I love gazpacho and this looks lovely. I’ll try to imagine summer (please!). We’re having another cold day in Denver today. Brrr.
This looks absolutely perfect. I’ve been wanting a gazpacho recipe for ages, but most of them seem to have you blend everything to a smooth soup, which didn’t really appeal. But this sounds perfect! I may even nip out so I can make it today :)
I am SOOOOO making this! I have always wanted to try it, now you just sealed the deal for me. YUMMY!!!!
Give me a big bag of torilla’s and I’m digging in! Great recipe :)
I have always, always wanted to make this in the middle of summer with excess veggies lying around. Gotta love a cold soup. Ever tried chilled avocado soup?
I haven’t had chilled avocado soup, but have always wanted to try it! Do you have a go-to recipe?
That soup looks veggieful! Basically health in a bowl :-)
Your soup does looks very hearty and delicious. I’ve never had gazpacho!
This looks great! I printed out quite a few different recipes bc I want to make gazpacho this weekend. Yum!
I love veggies and this looks awesome! Perfect for a hot summer day, if we ever get one!
This is similar to mine except I use a red pepper instead of zucchini and celery and real wine instead of wine vinegar. This is one of my all time favorites. I think I will try it with zucchini.
