Creamy Cucumber Salad

One of my favorite things about summer is a fresh cucumber salad. Bonus if the cucumbers come from a garden or farmer’s market! I love to slather a pita with homemade hummus and then stuff it with cucumber salad – it makes the best lunch! I go back and forth between a cucumber and onion salad with a sweet vinegar dressing, and this creamy version with plain yogurt, radishes and dill. I love the pop of the red radishes and the bright flavor from lemon juice and fresh dill.
Mmmm, fresh ingredients. Love those little radishes!

Creamy Cucumber Salad
Ingredients
- 2 medium cucumbers, peeled and thinly sliced
- 2 teaspoons salt
- â…” cup (163.33 ml) plain non-fat yogurt
- 1 teaspoon lemon juice
- 6 radishes, thinly sliced
- 1 teaspoon chopped dill
Instructions
- 1. Toss together the sliced cucumbers and salt in a colander. Let stand to drain for 45 minutes. Press the excess water out of the cucumbers and pat dry. Place in a bowl.
- 2. Add the yogurt and lemon juice and toss well. Stir in the sliced radishes and chopped dill. Serve chilled.

You know I looked at the pic and hirried on to the recipe because people want to put mayo in everything.  I hate that crap! I wish I could filter it out of everything! I’ll see a recipe only to scroll down and want to pull my hair out. Any how I was raised on Cold cucumbers white onion and salt and pepper in white vinegar. They were the highlight of supper. They onions and cucumbers were tart and cuunchy And the flavor on the taste buds just popped. Gotta try your recipe next
My mom always made her cucumber salad with vinegar. It’s the one I love too. Mom and her brother have an aversion to white foods i.e mayo, sour cream, yogurt,even ranch dressing and much of that has trickled down to the children. I have evolved though over the years but still won’t have a creamy cuke salad unless it’s ranch dressing :-) Although I may have to try with yogurt. My new favorite are the Thai cucumber salads.
I love to take cucumbers, green peppers and purple onions…salt, pepper, garlic to taste. I cut cukes the day before so I can drain extra water off them. Mix together with plain Greek yogurt…OR you can add zesty Italian dressing. Allow either version to chill at least an hour. Good thing about version with dressing you can keep adding the vegetables as needed – no more than week without starting fresh.
Maybe someone can show some insight on my question, I love cukes, grew up with them dressed with vinegar, etc. My husband says he remembers his mom made cukes with a sweet white dressing (she is no longer with us). I have tried everything I know to try and copy her recipe and he forever tells me nope not right. Any suggestions, anyone? I’m not a sweet eater but I would make it for him if I could figure it out!

I use seedless cucumbers. The following recipe is quick and easy:
2 medium or one very long cucumber peeled and sliced thin.
I small onion sliced thin
Kraft Green Goddess dressing
Add as much dressing as desird to cucumbers and onions Toss and refrigerate,
I love tossing cucumbers, tomatoes, cilantro, and lime juice together. It’s really refreshing on a hot day. Yours was delicious, by the way.

I’ve never had a creamy cucumber salad like your (gorgeous) photo displays. It almost sounds like tsatsiki sauce, which is a favorite of mine. Your mention of just pita with hummus and cukes got my mouth watering already. But the cukes with dill sound very intriguing. Thanks.

My favorite cucumber salad is simple…salt thinly sliced cucumbers, drain and pat just like your recipe does. Then combine with thinly sliced red onion, a tbsp or so of rice wine vinegar, salt, pepper and voila! Delicious, simple, tangy and refreshing.

Great post, Michelle! I have a Swedish cucumber salad recipe (vinegar base), but the creamy one you’ve presented here looks so inviting and the radishes are an ideal complement. LOVE the pita sandwich option. Light and refreshing…doesn’t get much better!
Creamy and crunchy. I can think of so many things that this salad would pair well with. Of course all on it’s own it’s pretty great too!

I make a cucumber salad as follows. I lay each individual slice on the cutting board and grate fresh pepper over them. Toss them into a bowl and add a little italian dressing and dollop of sour cream. Combine until blended. It’s a nice refreshing side for bbq.
This looks great. Dill and cucumber are a perfect combo, and making it creamy rather than using loads of vinegar sounds perfect too!
In Turkey, we make a version of this salad; it is called ‘cacık’ (pronounced jajick). Finely chop one cucumber per person, add about 1/2 – 3/4 cup good quality (not sour) plain yogurt, a good pinch of dried mint, crushed garlic to taste and some salt. Some people prefer this dish to be ‘looser’ like a soup, so they add water; others like it quite thick and use thickened yogurt (yogurt cheese…strained, drained yogurt) and no water. This dish is eaten as a side dish or salad and is especially popular in the summer for its cooling properties.
Looks Delicious Michelle! In the Persian culture, we have a cucumber salad with a different take. Chopped cucumber, plain yogurt, dried mint, golden raisins, chopped walnuts, salt,and pepper. Can’t wait to try yours! Delicious! :)
