The Weekend Dish: 4/20/2019
Happy holiday weekend to you!
Ours kicked off yesterday afternoon with a trip to the pediatrician for Joseph (horrible allergies, but not pink eye like we feared with how puffy and red his eyes were!) and Isabelle (an ear infection). Hopefully once they get a couple doses of medicine (and eye drops!) everyone will be happy healthy for Easter!

We were supposed to color eggs yesterday, but those plans got derailed with the trip to the doctor, so shooting for today :)

Love your weekend dish posts! We had a great day. I prepped all day Friday and Saturday so I could relax today after church. My menu was Honey-Baked Ham (cause it’s my favorite) * deviled eggs (cause they’re my mom’s favorite) * broccoli salad cause it’s my father-in-law’s favorite (broccoli, sunflower seeds, raisins, bacon, onion) * pasta salad ’cause it’s my middle son’s favorite (pasta, italian dressing, cucumber, tomato, green pepper, black olive) * glazed carrots (maple syrup, carrots, olive oil, cinnamon) * Hawaiian rolls * and carrot cake (I’m super picky about carrot cake and this one was developed over the years after not ever finding one I’m happy with. It’s actually SUPER dense more like the consistency of a thick banana bread kind of moist cake full of pineapple, coconut, pecans and carrots…. mmmmmmmm. It’s NEVER Easter without my carrot cake.
So sweet you make everyone’s favorite. What love u share in being so selfless. I wanted some of that carrot cake by the time I finished your post😊 you prepared a feast..wow.
We’re having spiral sliced ham, cheesy potato casserole, Italian green beans with onions and bacon, glazed carrots, roasted mushrooms, deviled eggs, and a pina colada dump cake. All very easy to make.

We were assigned appetizers. Roasted shrimp with cranberry horseradish chutney, fruit with yogurt dip and the requisite cheese and crackers. Have a blessed Easter.
We are using your recipes for Banana Cream Pie and Coconut Cream Pie today! I figure, if I follow a good recipe, paired with a little bit of my baking instinct, it should turn out okay right? Here’s hoping! Happy Easter!
