Friday Things

1. I’m back from Florida and MARRIED! I’ll be sharing more wedding details in a separate post, but to sum it all up, it was absolutely perfect and everything we had hoped it would be. We got married last Thursday evening right before sunset, standing barefoot in the sand.
2. The photo above was taken about 30 minutes before our ceremony began. It was storming up until that point, and started up again right as we were finishing up our photographs; we somehow managed to get a perfect window of weather!
3. Aside from actually getting married, our vacation was wonderful. A trip to the beach always feels so relaxing and rejuvenating. Toes in the sand, water lapping at your feet, the warm sun on your face. It just doesn’t get much better. I’m already anxious to go back!
4. Needless to say, it has been slow-going getting back into a routine this week. I’m still in vacation mode!
5. We aren’t wasting any time adding to our little family… today we are picking up a little brother for Einstein! A furry one, of course :) I promise to inundate you with pictures of a fluffy little Golden Retriever puppy :)

6. I don’t know about you, but I’m more than ready for some of my favorite fall shows to get started! Do you watch Homeland? If so, you have to check out the Season 3 Trailer. I can’t wait!
7. I have been on a short ribs tear since having Mac & Short Ribs back in the spring. The best meal I ate while on vacation was, hands-down, braised short rib with smoked cheesy corn grits. I plan on making these slow cooker short rib tacos by Jessica as soon as possible!
8. There was just a hint of fall in the air yesterday and it made me immediately crave Friday night high school football games (even though I never go, but I could always hear them from my old house), my favorite hoodie, nachos and hot apple cider. In no particular order. What are your favorite things about fall?
9. Speaking of fall, I am counting the days until hockey starts back up again. I am more than ready to start planning my schedule around Penguins games again :) It’s almost here!

My favorite fall things are putting on my white socks and white tennies, jeans and a long sleeved shirts and going for a long ride in the country in my hubby’s pickup with the windows rolled down – stopping for a picnic lunch and enjoying the fall air!

I first tried braised short ribs in a risotto recipe, where the braising liquid (mostly a bottle of red wine, with some stock to make it slightly less expensive) became the liquid for the risotto. To date it’s still my favorite, but it takes like 3 hours to make!
A question–have you ever tackled a Cherpumple/Monster Pie-Cake? My boyfriend is requesting one for his birthday and I’m trying to figure out if going 100% homemade will be an insane effort or an achievable one.

Short rib risotto (sorry, just my own recipe, so no concise link)–
Sear bone-in chuck short ribs (about 4) on all sides in dutch oven, then throw in half an onion (roughly chopped) and deglaze with a cup of a hearty red wine. Move to a 250 degree oven and cook covered for about an hour and a half. Then heat roughly equal parts wine and beef stock (I used bouillon/water), about 6 cups total, with fresh/dried thyme and any other red meat spices. In separate pot, toast about 2 cups of rice in 1 Tbl oil over medium-low heat. Add first cup of wine-stock mixture and stir frequently. Remove meat from oven and separate from bones (cutting off the membrane thing). Add bones and remaining liquid to wine-stock mixture. Add wine-stock mixture gradually to rice as you would for risotto (waiting until you can see the bottom of the pan, then adding next scoop) until rice is al dente. Then microwave a pound of frozen spinach to thaw (or use fresh chopped spinach), and stir into risotto. Stir in a quarter cup of grated Pecorino Romano if desired (makes it creamier), or a couple tablespoons of butter. Shred remaining beef and stir through risotto.

I love dogs, but while I have a Pug I’m more of a cat lover. And obviously the strays and abandoned cats around here (Lancaster, PA – a bad area in terms of how many stray/abandoned/unwanted cats and kittens there are) have figured that out, because we’ve taken in five in the past 13 months. Three were re-homed, one was put to sleep (he had FIV and got sick), and the other is still with us. Fingers crossed that no more show up on our doorstep for a while…
Anyway, sorry to hijack your post. :) Once again, congratulations!

I have a Golden that I rescued. He is the best, Out of all the dogs I have had (even raised collies for the ranchers) he has the most character and is very smart, and was easy to train. Although he is nearly 9 yrs old now he is still very playful. He travels with me all over and is my protector. Don’t have to ask him twice to get in the car, just open the door and he is ready to go.
