Peanut Butter & White Chocolate Rice Krispies Treats

I spent my last weekend in Florida mulling over some different variations of Rice Krispies treats. Those crispy, marshmallow-y treats are one of the simplest things to make, yet some of the makeovers they have received lately result in some borderline gourmet desserts. The possibilities when playing around with the flavor combinations is virtually endless. I made a batch down in Florida that included bittersweet chocolate and hazelnuts, and although they were good, they were missing something. I’m still working on those, but I noodle around on that, I switched gears and started thinking about white chocolate and peanut butter. And I’m so glad I did. What an underrated and under-utilized flavor combination!

The catalyst for the white chocolate/peanut butter brainstorm was discovering this peanut butter:

Save This Recipe
It’s from Peanut Butter & Co., which I had heard about, but until recently had never seen stocked in stores near me. This peanut butter is a blend of natural, creamy peanut butter with white chocolate. Serious heaven. I also picked up The Bees Knees, which is peanut butter blended with honey – incredible. And highly addictive. I highly recommend checking to see if your store has them, and if so, stocking up!
The combination of the peanut butter and white chocolate melds incredibly well with the marshmallows, and gives great flavor to the cereal bars. I added in white chocolate chips and peanut butter chips at the end, just to give it an extra boost of flavor (plus, I embrace any and all excuses to buy peanut butter chips – I shamelessly eat them right out of the bag!). Some of the chips melted a bit when I stirred, but the pop of flavor is still there.

I’m having fun experimenting with different varieties of Rice Krispies treats (you might remember the Peanut Butter Cup Rice Krispies Treats) – do you have a favorite?

Wow, I saw this picture and it looks very similar to something I just made! I just added candy corn!
Oh my goodness! These look so good. I have to find some of the peanut butter! Thanks for sharing :)
I love to play around with Rice Krispie Treats, and this version looks mighty good. I definitely need to keep my eyes open for some of that peanut butter! One of my other favorite “mix-ins” for Rice Krispie Treats is Nutella. :)
I have a serious addiction to flavored peanut butters. I ask for them for my birthdays and Christmas.
I have a rice krispies treat problem. The problem: I eat them all! I’ll be making this very soon. And I love PB&Co. My favs are Cinnamon Raisin PB and Dark Chocolate PB.
I love ANYTHING with PB in the mix! Thank you for the recipe :D
What a perfect addition to one of my favorite simple treats (rice krispie squares!)
Peanut butter is so yummy. White chocolate? Can’t go wrong.

Veryp hip recipie! But yes, I just opened a jar of White Chocolate PB, and I must say, while its not overpowered by the white chocolate taste, like I thought it would it was still really good and a nice change up from plain! PS…I got though a bag of white chocolate chips a week! Its my sweet treat during the week. And I also make a mean homemade white chocolate icecream…heaven in a bowl
yum yum yummmmmm these sound delicious! can’t wait to try them :)
I have never seen that before! White chocolate and peanut butter blended together!? That is like genius. This looks great!
OH MY, oh my, oh! my!! Giant Eagle & Wal Mart here I come . . . I think these will be the bomb. 2 of my kids who are away at college will be needing a little something from home very soon ;) & what could be more perfect that a new twist on a great comfort food?
LET’S GO PENS!! It’s a hockey night :)
GO STEELERS!!
Michelle
Yum! I’ve been thinking of trying a variation using the Halloween cereals like Frankenberry. Have you tried this? Instead of rice krispies. Curious if you’ve done it and what you would add?
Hi Naomi, I’ve never had Frankenberry cereal, so I’m not quite sure. Maybe another reader has tried this though – does anyone have any suggestions??
This is my favorrittee peanut butter!! I have switched over to making my own PB though (http://yellebellyboo.blogspot.com/2011/09/peanut-butter-attempt-1.html) and I saw a recipe for white chocolate PB here: http://www.howsweeteats.com/2011/03/homemade-white-chocolate-peanut-butter/ that I could use!!
I’ve always put chunky peanut butter in my rice krispie treats. Wish I could take credit for the idea of adding peanut butter but it was a variation listed on the Rice Krispie box when I was a kid way back in the dark ages. Using chunky was my idea, though. Regular ones without the peanut butter just seem to be missing something. I’ve never tried adding anything else.
I have a bag of peanut butter chips that I’ve been trying to figure out how to use. Now I know! These look too good!
Hi Michelle, Where did you find that peanut butter? Love white chocolate. Can’t wait to make these for Hubby. GO STEELERS!
Hi Mary Lynn, I found it at Wal-Mart (which I never usually shop at, but happened to stop in for something else and saw it). I know another Pittsburgh food blogger has found Peanut Butter & Co. peanut butters at Giant Eagle as well.
Thanks Michele, Going to Giant Eagle this morning in search of Peanut Butter. We rarely shop at Wal-Mart, since there isn’t one close to us yet. I have the day off from work and plan on cooking and baking. Great stress reliever. Your Kielbasi and Brown Sugar recipe is on the menu for Sunday’s game.
Sounds like a perfect day! Enjoy! We are having the kielbasa tomorrow for the game as well :)
Whoops, I called you Barbara. I know you are Michelle. I just woke up not long ago. Sorry, Michelle!
Barbara My husband is like a little kid when it comes to rice crispy treats. He will love these. In fact, one day I should get him to do a post about them. He would love that.
I can’t believe they make white chocolate peanut butter. What an interesting/delicious combination! I’m going to have to scour the aisles of my supermarket!
I almost never make Rice Krispie Treats because they’re like my Kryptonite – I just want to eat the entire pan. I don’t even wait for them to cool off! I usually burn my tongue eating some straight out of the pan! When I do make them, I want just plain old classic ones, or maybe with some chocolate chips thrown in…
My friend Emily made me a batch of your PB cup rice krispies treats last year…I can only hope she’ll surprise me with these as well :D
A childhood favorite, kicked up a notch! Sounds great! This will go great in my husbands lunch! Thank you!
I really need to try that PB brand! It sounds sooo yummy!
The WCW is like my FAVORITE pb ever. ;) Deeelicious treats!
It’s so much fun to try and think of new ways to make rice krispie treats and these look so good! Perfect combination of flavours.
Crunchy rice krispies combined with white chocolate and peanut butter is a little too much – THANK YOU :D
The salt in the peanut butter and the sweet of the white chocolate sound like a perfect match. And then when made with the crunch of the rice krispies…sounds sooo good.
These look delightful. My husband is a RCT addict. He would love this white chocolate-peanut butter variation!
Last Fall, I made these delicious browned butter pumpkin pie rice krispie treats and my coworkers loved them!
Once again you are making my tummy grumble right before bed!! These look amazing! I need that peanut butter in my life, right now!!
I made these this week for a birthday gift. They turned out great. I pressed additional peanut butter and white chocolate chips to the top. Like Michelle said, the chips added to the mix melted. My birthday recipient loved them and they were so easy to make. I can’t wait to make my next birthday batch.
