Peanut Butter & White Chocolate Rice Krispies Treats
I spent my last weekend in Florida mulling over some different variations of Rice Krispies treats. Those crispy, marshmallow-y treats are one of the simplest things to make, yet some of the makeovers they have received lately result in some borderline gourmet desserts. The possibilities when playing around with the flavor combinations is virtually endless. I made a batch down in Florida that included bittersweet chocolate and hazelnuts, and although they were good, they were missing something. I’m still working on those, but I noodle around on that, I switched gears and started thinking about white chocolate and peanut butter. And I’m so glad I did. What an underrated and under-utilized flavor combination!

The catalyst for the white chocolate/peanut butter brainstorm was discovering this peanut butter:

It’s from Peanut Butter & Co., which I had heard about, but until recently had never seen stocked in stores near me. This peanut butter is a blend of natural, creamy peanut butter with white chocolate. Serious heaven. I also picked up The Bees Knees, which is peanut butter blended with honey – incredible. And highly addictive. I highly recommend checking to see if your store has them, and if so, stocking up!
The combination of the peanut butter and white chocolate melds incredibly well with the marshmallows, and gives great flavor to the cereal bars. I added in white chocolate chips and peanut butter chips at the end, just to give it an extra boost of flavor (plus, I embrace any and all excuses to buy peanut butter chips – I shamelessly eat them right out of the bag!). Some of the chips melted a bit when I stirred, but the pop of flavor is still there.

White Chocolate & Peanut Butter Rice Krispies Treats

Yield: 16 squares
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
4 tablespoons butter
1 bag (10.5 ounces) miniature marshmallows
½ cup peanut butter with white chocolate*
5 cups Rice Krispies cereal
½ cup white chocolate chips
½ cup peanut butter chipsDirections:
1. Butter (or spray with non-stick cooking spray) an 8- or 9-inch square baking pan; set aside.
2. Melt the butter in a large saucepan over low heat. Add the marshmallows and stir until completely melted. Remove from heat and stir in the peanut butter until melted.
3. Add the Rice Krispies cereal, white chocolate chips and peanut butter chips. Stir until well coated.
4. Using a greased spatula or spoon or a piece of wax paper, evenly press the mixture into the pan. Allow to sit at room temperature for at least 30 minutes, or until set. Cut into squares and serve.
*Note: If you can't find the peanut butter/white chocolate blend, use the same amount of regular peanut butter and add 2 ounces of white chocolate, melted.

I made these this week for a birthday gift. They turned out great. I pressed additional peanut butter and white chocolate chips to the top. Like Michelle said, the chips added to the mix melted. My birthday recipient loved them and they were so easy to make. I can’t wait to make my next birthday batch.

I almost never make Rice Krispie Treats because they’re like my Kryptonite – I just want to eat the entire pan. I don’t even wait for them to cool off! Hi Mary Lynn, I found it at Wal-Mart (which I never usually shop at, but happened to stop in for something else and saw it). I know another Pittsburgh food blogger has found Peanut Butter & Co. peanut butters at Giant Eagle as well.

I’ve always put chunky peanut butter in my rice krispie treats. Wish I could take credit for the idea of adding peanut butter but it was a variation listed on the Rice Krispie box when I was a kid way back in the dark ages. Using chunky was my idea, though. Regular ones without the peanut butter just seem to be missing something. I’ve never tried adding anything else.

Yum! I’ve been thinking of trying a variation using the Halloween cereals like Frankenberry. Have you tried this? Instead of rice krispies. Curious if you’ve done it and what you would add?

Veryp hip recipie! But yes, I just opened a jar of White Chocolate PB, and I must say, while its not overpowered by the white chocolate taste, like I thought it would it was still really good and a nice change up from plain! PS…I got though a bag of white chocolate chips a week! Its my sweet treat during the week. And I also make a mean homemade white chocolate icecream…heaven in a bowl

I love to play around with Rice Krispie Treats, and this version looks mighty good. I definitely need to keep my eyes open for some of that peanut butter! One of my other favorite “mix-ins” for Rice Krispie Treats is Nutella.

I made these this weekend for a girl’s weekend I was at with my oldest friends. It was in honor of a friend who just got engaged – ahead of the weekend I asked her what her fave sweets are and she said rice krispie treats and anything peanut butter. Ironically you posted this just in time. They came out AMAZING!! I couldn’t find that white choc. peanut butter, but used regular creamy pb. these are really good. i found the PB at target (not a ‘super’) and made this right away. i drizzled just a bit of melted chocolate on top and loved the addition. thanks for the recipe!
