Chubby Hubby Truffles

Once again, Pinterest is amazing. If not for my little virtual bulletin board, I probably wouldn’t have stumbled across these gems. They are peanut butter-pretzel truffles, or as I aptly named them – Chubby Hubby Truffles, after the famous Ben & Jerry’s ice cream. I consumed more pints of that stuff than I care to admit during my college days. It was a staple in our little mini-fridge’s (even mini-ier) freezer. Being the peanut butter lover that I am, there is absolutely no way I could resist chocolate-covered, peanut butter-filled pretzels swirling around in ice cream. Throw in sleep deprivation, lackluster cafeteria food, cram sessions and broken hearts (not only did you wallow in your own relationships gone bad, but you had to help your friend polish off a pint when some boy broke her heart too – that’s what friends do), and I probably should have skipped college and just bought stock in Ben & Jerry’s instead. So when I saw my favorite ice cream in truffle form (and so incredibly easy to make), I whipped them right up. The sweet and salty, smooth and crunchy – it all dances around in one little truffle. I dare you to only eat one. (Hint: It’s impossible, I tried and failed miserably.)
These are made very much like the traditional buckeyes – a mixture of peanut butter, butter and powdered sugar rolled into balls and then dipped in chocolate (a Christmas staple!). The kicker is the crushed up pretzels – they add a kick of salty and a little bit of crunch to what is already an unbelievable treat. And you all know that next to peanut butter and chocolate together, the other thing I can’t resist is a sweet/salty combo. Bonus for me – I get it all right here in one little truffle!
These are super easy to make – no special equipment needed. Just a bowl, a spoon and your ingredients. Be forewarned – you’ll probably “accidentally” leave some of the mixture in the bowl which will require you to not waste it and eat what’s left with said spoon. We don’t want to waste, now do we?[/donotprint]
Peanut Butter-Pretzel Truffles
Ingredients
- 1½ cups (120 g) pretzel pieces
- ½ cup (129 g) creamy peanut butter
- 1 tablespoon unsalted butter, at room temperature
- 2 tablespoons light brown sugar
- Pinch salt
- 3 tablespoons powdered sugar
- 1 cup (180 ml) milk or semisweet chocolate chips
- 1 tablespoon vegetable shortening
Instructions
- Put the pretzel pieces into a resealable plastic bag and crush into very small bits (a rolling pin works great for this).
- In a small bowl, combine the peanut butter, butter, brown sugar and salt. Stir until all of the ingredients are completely blended and smooth. Add the pretzel bits to the peanut butter mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.
- Line a small baking sheet with wax paper. Using a small cookie scoop, or about 2 teaspoons worth of peanut butter mixture, gently shape into a ball with your fingertips. Place the ball on the wax paper-lined cookie sheet and repeat with the remaining peanut butter mixture. Place the baking sheet into the refrigerator and chill for at least 30 minutes.
- When ready to dip the truffles, microwave the chocolate chips and vegetable shortening together in a small bowl at 50% power in 30-second increments, stirring after each, until completely melted and smooth.
- Working one at a time, dip one peanut butter-pretzel ball into the melted chocolate and use a fork to roll it around, ensuring that it is completely coated with chocolate. Let any extra chocolate drip off and place back on the wax paper-lined sheet. Repeat with all of the peanut butter-pretzel balls.
- Return the baking sheet to the refrigerator and again chill for at least 30 minutes. Garnish with a drizzle of melted peanut butter and crushed pretzels, if desired. Store in an airtight container in the refrigerator.

Yes, you can freeze them! They would keep well in the freezer for up to 3 months.
Do you have to kerp them refrigerated?
Have you tried extracts with cream cheese?
Like gingersnap cookie truffles with orange extracts?
Banana sandwich cookie truffles with rum extract? Oreo sandwich cookies with peppermint or coffee? Vanilla with maple or hazlenut?
Lemon with coconut?
Can you use liqueur in cream cheese? Grand marnier, chambord, creme de cassis, godiva, rumchata, baileys irish cream? Im thinking a tablespoon or less per 8oz of cream cheese.
Any thoughts??

I crushed the pretzels before measuring, which was a huge mistake. I ended up with way too much and it didn’t work. I will need to try this one again and measure before crushing!
Oh my god these are pure bliss. I made them vegan (with earth balance and dark chocolate chips) and they turned out fabolous!
I decided to make these for a cookie exchange. The recipe only makes 18, so after tripling this, I decided to make actual Peanut Butter Balls and just swap out the Rice Krispies for the pretzel bits! It makes the mixture smoother and easier to form into nice balls. And you can shorten the dipping process by using chocolate bark coating. Cuts out the need for shortening. I think they’re going to love these tonight!
Do you have to use pretzels can u use Cheerios
Hi Daytona, The pretzels imitate the traditional flavors of chubby hubby ice cream, but you could try Cheerios if you’d like.
Made these for Christmas! I made them gluten, lactose and peanut free for the allergies in our household! Worked so well! Used gluten free pretzels, no nut butter (made with soybeans), and lactose free chocolate! Was such a big hit!
What do you think about pressing them in a pan, cutting into little squares, and then dipping in chocolate? Do you think this would save rolling time?

I made these yesterday and used gluten free pretzels, earth balance non-dairy butter, and dairy free chocolate chips. Vegan, gluten-free, and DELICIOUS!
I just made this and the peanut butter part is cooling in the fridge right now. I really do hope they turn out! I too had problems with lumpiness. I had to add way more peanut butter and even a little honey to get the mixture to bind. I pressed them into a scoop and got pretty neat little mounds, nonetheless. If I make them again I will reduce the amount of pretzels and up the peanut butter. Just providing a little feedback for those who might get frustrated.
For those having trouble with “lumpy” truffles, I recommend firmly pressing the mixture into the cookie scoop. Then once you have them all on the sheet, go back and roll them in your hands. This really smooths and rounds them out. I’ve made these a few times now and I think they’re fantastic. The peanut butter drizzle and pretzel topping really take these over the top!

Hi Kelli, I would not recommend substituting butter, as it has different properties than shortening, and the chocolate may not melt properly.
Making these this weekend! I was wondering what the purpos of the vegetable shortening is. Would it work if I dipped them in just melted chocolatewithout the shortening?
Hi Verinica, The vegetable shortening thins the chocolate, which makes coating the truffles much easier. Otherwise, the chocolate will get sort of gloomy. I would not recommend doing it without the shortening.
I made these last night on a whim. They were great! “Chubby Hubby Balls!” Ha Ha Ha. I love the crunch! I made them with Semi Sweet chips and next I might try Milk chocolate.
Just finished making a batch of your gorgeous truffles! I found that the crushed pretzel garnish stuck better when the chocolate coating still had a glossy sheen. Will post photos on my blog in a couple of weeks … with full props to you, of course.

Hi Lulu, I would not recommend butter; if you must substitute, I would recommend coconut oilI would try coconut oil, although you will certainly notice the coconut flavor.
Just finished making the filling so waiting on the chillin! Good even not covered in chocolate! Omg…. So easy and so good! The only thing that would make this any better is to serve them with a bowl of B&J”s ice cream!

I tried making these and ran into a lot of problems. I read the amount of pretzels as crushed like a few others did. I also used fresh peanut butter instead of jarred. They were so dry I couldn’t roll them together. I had to add extra peanut butter and butter and they still didn’t hold together very well. I wish I had known :(
When I make Buckeye Balls I melt the PB and Butter. You don’t do this with this recipe? What would happen if you did? Anyone try that? These sound delicious and I will give it a try! :)

I made a batch of these last weekend to test and they are so amazing! We are addicted to them now and are so good that I decided to make 3 double batches to give out as Christmas presents to friends and family. They are relatively easy and lots of fun to make! Great for mailing in packages. And my husband loves to eat the leftover mixture and melted chocolate :)

Wish i would have read through all the comments first… I measured my pretzels crushed, and it was a pain getting them into “neat, little,balls”. Guess this batch will be extra crunchy.
I attempted to make these today but they would not hold the round shape. They kept crumbling. So I spread them in a pan and stuck them in the freezer. Then I drizzled them with melted chocolate and cut them into pieces. Kind of like a bark.
I make a similar item, but instead of pretzels I use graham cracker crumbs. The pretzels would definitely shine against the sweetness of the PB mix. Looks like I have another version to try!! Thank you. Your creativity is appreciated. Different backgrounds definitely bring different food experiences to the table!!
I used Jif Natural Peanut Butter in these and it was a disaster. Every time I dipped them in chocolate, they just completely fell apart. That’s the only thing I can think of — the Jif is super thin and creamy since it needs its oil mixed in. Sucks cuz I made a double batch :(
Can you just use Baker’s chocolate or other melting chocolate as opposed to combining melted chocolate chips and shortening?
Hi Rachel, I’m not sure what Baker’s chocolate is. Adding the shortening to any type of chocolate when you melt it for the purpose of coating something thins it out, which keeps it from clumping up. You could substitute coconut oil if you don’t want to use shortening.

Hi! I am a long time reader, your recipes and insight are SUCH a lovely addition to our family! Would you say this truffle recipe is basically comparable to the buckeye recipe on your website except the truffle recipe has pretzels? It seems like the buckeyes are super sweet with all the powdered sugar, but it makes a ton more than the truffle recipe. Thanks for any insight.

Hi Tina, You can substitute an equal amount of coconut oil in place of the vegetable shortening.
made these for a picnic and they were a HUGE hit! i drizzled caramel on the top. easy and fun to make…great kid activity!
Instead of making these into truffles, I skipped the chocolate-coating part and added chunks of these to vanilla bean ice cream with a fudge swirl…modified Chubby Hubby ice cream! It was delicious :)

Hi Araella, I’m not sure what “plain” shortening is, but any type of shortening, or I’ve heard people have had success with coconut oil.

I haven’t frozen them, but you could definitely make them a week or so in advance and just refrigerate.

I made a batch of these a few weeks ago, and they were so good that they didn’t last but 10 minutes in my house!! For NYE I made a bit larger of a batch… I made 125 of them. No. lie. And come the next morning, there were only 4 left! I get the feeling that… maybe… everyone kind of liked them ;) THANKS for such an AMAZING RECIPE!!!!!
I forgot about this blog until I saw it on this blog today. I have to make these. They look TDF-Good! My favorite combo – PB and Pretzel. What could be better. My son is allergic to nuts so I would not normally make something like this BUT this weekend my son will be out-of=town so I will make these for my hubby and I. I’ll get back to you on it. I bet they are amazing. The picture looks like something out of a candy shop.
I made this over Christmas and they definitely came out lumpier than the photo. Next time I’ll crush the pretzels a bit more as the larger pieces didn’t incorporate into the mixture that well. Also I think I’d make the peanut balls a little smaller since one you dip them in chocolate they do increase in size. They were definitely a huge hit though!

I made EIGHT batches of these yesterday to give out at our Christmas Eve celebration. I think they are wonderful. I used extra thin “Utz” pretzels that I measured in a dry 1 1/2 cup measuring cup. I pressed down on them slightly and then crushed them down (not into a powder, but small pieces) in a gallon bag. I was doubling the ingredients (or so I thought) but forgot to double the brown sugar and powdered sugar the first two times. I added extra powdered sugar later on since the mixture wasn’t stiff enough to scoop out. I then just mixed up the other batches using the correct measurements and then mixed all eight batches together in a large bowl to help ensure all truffles were consistent. The finished product reminds me of the awesome peanut butter pretzels from Edward Marc! I am sure they will be a big hit. I have to say I was worried that the pretzel pieces were going to get soggy but I ate one for breakfast (bad girl!) this morning and they were as crunchy as they were yesterday. My kids and I made these last night and I just thought they were okay, even though I usually love chocolate-PB combinations. One problem is that I read 1 1/2 cups of “pretzel pieces” as the chopped ones, so I ended up with way too much pretzel and had to double everything else then. I think that’s supposed to be 1 1/2 cups of pretzels and then you make little pieces out of them? They were a bit too salty and rich. I may have over-crushed the pretzels too. I think they might have been better with larger pieces instead of finely crushed pretzels. The only change I made was to use cashew butter instead of peanut butter because we have a peanut allergic child. Maybe store-bought PB would have made a sweeter truffle since there’s usually a lot of added sugar? We dipped some in melted white chocolate chips and some in melted dark chocolate chips and then drizzled the other color on top and sprinkled pretzel bits on top. They looked really impressive but I’m going to try some other truffle recipes next.
Thanks so much for the recipe! Turned out great! Im using them to give out for christmas gifts this year. I tried melting the chocolate once with the vegetable oil and it didn’t turn out so well for me. But it still worked great with out it! Loved the semi-sweet chocolate chips.

I made these today for part of my Christmas cookie plate and they are soooo good I think I ate several truffles worth of the peanut butter filling while making them! I don’t know how you got them so round, they were sooo sticky and messy to roll and with the little pretzel pieces they came out a bit lumpy. I will make these again for sure.
My husband and daughter love peanutbutter and these sound just the thing to make for them, but I have a question, do the pretzels get soggy after a while or do they stay crunchy?

They definitely don’t need to be frozen, and this time of year I think it would be more than cool enough where the chocolate shouldn’t melt.

I LOVE YOUR BLOG! I just registered so that I can start leaving comments for all the wonderful things I’ve made from your site. I made these last week to add to my cookie trays. I quadrupled the recipe because I already decided they sounded too good for just one batch. I grew up on buckeyes and loved the idea of the extra crunch and salt in these. I did need to add more powdered sugar to get the texture right at those quantities. It made 91 wonderful truffles. Dipped some in milk, some in semi sweet. I drizzled melted peanut butter chips on top and started topping with crushed pretzels because I loved the look…then realized that for the storage time I needed, the pretzels would get stale…so I stopped…bummer! The only change I would make for next time is to add a little more salt which might have gotten thrown off in the quadrupling, or maybe sprinkle a tiny bit of really coarse salt on top to get the perfect sweet salty combo…not that the 91 I’ve made will get a single complaint from my family or any of my cookie tray list recipients…Thank you for a really fun recipe!

Hi Shawnie, That refers to chocolate chips – as in, you could use 1 cup of milk chocolate chips or 1 cup of semisweet chocolate chips, whichever your preference is.

I love that buckeyes are a staple in your holiday-life too. They have been in mine since I can remember. My mom makes them every year and this year I am going to give them a go as well. These sound amazing. I can’t eat ice cream (lactose intolerant…ugh), so I love ice cream alternatives!

I have these pinned too. I think I would drizzle caramel as others have suggested and instead of crushed pretzel, a little bit of kosher salt maybe? Made a cookie like that, it was fantastic. I am sure these truffles are too!
Stupid question. . . . but do I measure the pretzel pieces before or after I crush them??
Hi Brigette, Not a stupid question! Measure them before you crush them (I broke mine into smaller pieces to measure so that they fit into the measuring cup).
You might want to note that the pretzel measure is prior to breaking them. I broke them first and ended up with too much pretzel and they didn’t hold together well. Tasted good though. I’ll try these again

Hi Anne-Marie, So sorry I forgot to include the garnish in the recipe, I have edited it above. It is melted peanut butter (I just used a spoon to drizzle back and forth), and a sprinkle of crushed pretzels.

Wow these look fantastic :) I’m from Columbus where Buckeyes are the official candy, but I prefer mine with rice krispies or pretzels inside for that salty kick. And Chubby Hubby was always my flavor of choice when I was addicted to Ben & Jerry’s in college!

Hi Lisa, I had regular size pretzel (the thin kind), and broke them into pieces before measuring. And yes, the brown sugar should be packed.

I am going to make these with soy nut butter. My son is allergic to peanuts but would love these.

Hmm that’s a good idea! I imagine you could mix in a little malted milk powder.
What about crushed Maltezers/malt balls?
They look amazing! Another great thing to use in them is Rice Krispies, it also adds an extra crunch.
