If you do, you are going to LOVE this peanut butter and marshmallow riff on them. There’s nothing better than an ooey, gooey sweet treat, and if you’re a popcorn fanatic this is going to be right up your alley. It goes without saying that I’ll pretty much put peanut butter in any recipe, and it is amazing with the marshmallows and popcorn. I threw in some chocolate chips for good measure and because, well, chocolate chips are rarely a bad decision!
I had the opportunity to give the new Peter Pan peanut butter, Simply Ground, a test spin and for a serious peanut butter lover like myself, this stuff was absolute heaven! This is fresh ground peanut butter with a little bit of consistency left, so it’s creamy but has just a bit of crunch, which is totally the best of both worlds. I may have eaten half of the honey roasted jar straight up with a spoon. No apologies.
Since I had the opportunity to be a little adventurous with a new peanut butter, I wanted to throw together a fun and easy recipe that would be perfect for after school snacks, camping trips and backyard swim parties. Mission accomplished!
I popped my own popcorn for this recipe, but you could totally buy a bag of plain popcorn at the grocery store, or use microwave popcorn all the same. I would just stay away from overly buttered popcorn, as I don’t think the flavors would play nicely with these bars.
If you’re looking for an easy and fun recipe that serves a crowd and satisfies a sweet tooth, whip up these peanut butter and marshmallow popcorn bars ASAP. I think these would also be great formed into balls for gifts at the holidays!

Peanut Butter & Marshmallow Popcorn Bars
Ingredients
- ¼ cup (56.75 g) salted butter
- 10 ounce (283.5 g) bag marshmallows
- ¾ cup (193.5 g) Peter Pan Simply Ground peanut butter
- 12 cups (132 g) plain popcorn
- ½ cup (90 g) semisweet chocolate chips
Instructions
- Grease a 9x13-inch baking dish; set aside.
- Melt the butter in a large saucepan over medium-low heat until melted. Add the marshmallows and stir until completely melted. Add the peanut butter and stir until it is melted and thoroughly combined with the marshmallow mixture. Add the popcorn and quickly stir to coat all of the popcorn.
- Turn the popcorn mixture out into the prepared pan and sprinkle with the chocolate chips. Using a spatula or wooden spoon coated in non-stick cooking spray, press into a compact, even layer.
- Allow to sit at room temperature until set, about 1 hour. Cut into bars and serve. Leftovers can be stored in an airtight container at room temperature for up to 4 days.

I saw this on Saturday and had to make it pronto. It was just what I wanted…buttery, sweet, chewy and crunchy, all rolled up in one! I was surprised that the peanut butter flavor wasn’t more dominant. To me, the net effect tasted more toffee-like, with just a kiss of peanutty overtones. I might try adding some mini Reece’s pieces or peanut butter chips the next time. But as it, Just outstanding! These would make dynamite popcorn balls for the holidays.

I have a question. I live in St Thomas in the caribbean and as u know its humid so everytime i pop popcorn it loses its crunch about 5 minutes after popping it. Do you think after making this recipe and letting it set countertop for an hour the popcorn will actually get coated enough to stay crisp? If not any suggestions?

Hi Lisa, If you’re popcorn starts out soggy, then using it in the recipe won’t crisp it up.
I love salty/sweet combos and totally digging this recipe with the popcorn, salted butter , marshmallows and peanut butter! And I have everything in my pantry right now :) YUM!
I’m checking to see if pop up advertisements are something new on your site?
I ask because they have never been there for years and only recently these pop ups are all over the site. It’s one thing to x them out, but they’re even right smack in the middle of where you read the recipe and I can’t eliminate them. At first I thought it was my browser, but after going to the other food blog sites that I usually visit, there are none, just on the BEB.

I have noticed that lately, too. I love the BEB site but the page placement of these ads is really bothersome and is in the way of the text and recipes.
The option banner on the left covers some text on my computer screen. I found that if I reduce the zoom, I can read the entire screen. You might try that.

I love peanut butter and marshmallows together. Does the popcorn stay Crispy in the bars? I find sometimes when I use popcorn in a recipe it gets soggy.

I had no idea that Peter Pan made this simply ground PB!! I’m on it. Holy moly. Peter Pan is the best peanut butter out there bar none. It’s the love of my life. And these bars look fantastic, but like you said, who doesn’t like Rice Krispie bars….they make the world go round…or at least my butt. Just kidding!
