Chubby Hubby Rice Krispies Treats

Do you remember the amazing Chubby Hubby Truffles from a month or so ago? The truffles that I fashioned after my favorite ice cream of all time – Ben & Jerry’s Chubby Hubby? For those of you who may not have heard of it, Chubby Hubby consists of vanilla ice cream chock full of peanut butter-filled, chocolate-covered pretzels. It got me through college, and I still can’t get enough of that flavor combination to this day. Given how much I loved the truffles, and how much you all said you loved the truffles, I started brainstorming about other things that I could put a chubby hubby spin on and came up with these peanut butter-pretzel Rice Krispies treats topped with chocolate. Talk about addicting!

Regular Rice Krispies treats get some peanut butter added to the melted marshmallows, and then in place of some of the Rice Krispies, you add pieces of crushed up pretzels, and I threw in some peanut butter chips for even more peanut butter flavor. Then, of course, they are topped with chocolate. If you want to up the chocolate factor, you could always throw some chocolate chips in with the peanut butter chips (or swap them). I think these have an awesome balance of all three flavors, and can’t stop eating them. Although that’s not necessarily surprising since I am a huge fan for Rice Krispies treats and am always a sucker for any fun variation on the classic recipe.

One year ago: Banana Cupcakes with Vanilla Pastry Cream

Chubby Hubby Rice Krispies Treats
Ingredients
- 3 tablespoons unsalted butter
- 10.5 ounces (297.67 g) miniature marshmallows
- ½ cup (129 g) creamy peanut butter
- 4 cups (112 g) Rice Krispies cereal
- 2 cups (160 g) crushed pretzel pieces
- ½ cup (85 g) peanut butter chips
- 2 cups (360 g) semisweet chocolate chips
Instructions
- Grease a 9×13-inch baking dish; set aside.
- Melt the butter in a large saucepan over low heat. Add the marshmallows and stir until completely melted. Remove from heat.
- Off the heat, add the peanut butter and stir until completely melted and smooth. Add the Rice Krispies cereal, pretzel pieces and peanut butter chips, stirring gently until all dry ingredients are coated. Turn the mixture into the prepared baking dish and press it into the pan, creating an even top.
- Microwave the chocolate chips on 50% power in 30-second intervals, stirring after each, until completely melted and smooth. Pour the chocolate over the treats and spread in an even layer with an offset spatula. Let cool at room temperature until set, about 1 hour. (You can also refrigerate the treats for about 30 minutes to speed up the process.) Store leftovers at room temperature in an airtight container.

Do you think this could be made without peanut butter and still be so good? I need to make something for 35 cheerleaders and a few have peanut allergies. Ideas anyone?
Hi Debi, You could definitely leave out the peanut butter, they just won’t still be “chubby hubby”, more like “chocolate pretzel” :)

Thanks for this recipe! Another one of your posts led me here, I love the embedded links. These were so good, I made them for a movie party. The pb was so creamy plus salty crunchy pretzels! The chocolate chips on top put me over the edge. I can’t get enough. I keep walking by and cutting off another little hunk, and another . . . I think it will be a staple in the house! does anyone know if it is okay to use ” natural peanut butter” or does it have to be standard no stir kind in order for recipe to work?
Hi Jill, You could use the natural peanut butter that does not require stirring or refrigeration – I believe that JIF and Skippy both make versions of this. I would stay away from the natural varieties that require stirring and refrigeration, as it’s generally too oily.
Help! This recipe totally frustrates me. I’m a pretty avid and adventurous cook/baker and thought these would be easy to whip up. I’ve tried twice now and always encounter the same problem…when I take the butter/marshmallow mixture off the stove and add the peanut butter, the mix starts to stiffen to the point that nothing can be added to it. What am I doing wrong? Please help. Thanks!
Hi Rachel, It sounds like either the heat was too high or the mixture is on the heat too long if it seizes up.
Michelle, I had exactly the same experience as Rachel did. Tried two batches. Same thing happened to each. I am at the point withe the 2nd batch, where I have added the Rice Krispies to the melted butter, marshmallow, peanut butter and the Rice Krispies. Very difficult to mix up. I am determined to not give up like I did with 1st batch. I don’t think I had heat too high, as I melted the ingredients very slowly onal low. Maybe as you suggest, I left mixture on the low heat too long, as I was afraid that if I let it start to cool, then it would stiffen (as in first batch). When it became too stiff to handle anyway, I tried adding another Tbsp of melted butter, but that did not help. Can you suggest what I can do now to save this batch? i.e. warm up in oven, or make balls out of the unevenly mixed mixture? I would like your suggestions, please. Thank you.
I have made 5 batches of them and have eaten at least 4 of them myself! As a new mom who is not getting much sleep and relying on sugar to keep me awake, these have come in handy at all hours of the day! I have even upped the pretzel/krispie ratio because I love the addition of the salty. Everyone goes crazy for them, on the rare occasion to choose to share! Thanks for this one!!
I made these tonight and your focaccia! These came out fantastic! I mistakenly purchased chocolate and peanut butter morsels but they turned out awesome! My favorite version is a Pumpkin Spice Krispie Treats that I make with Erewhon’s Crispy Brown Rice Cereal. My son ate 2 batches really quickly and wants more. Made me make a batch to bring to our friends house on Christmas Day. She loved them too.

These do sound delicious. For me, a key flavor in Chubby Hubby is the malt in the vanilla ice cream. I’m going to try these with some malt powder stirred in. I’ll let you know how they turn out.

I too love rice Krispy treats. I love to use other cereals instead of rice krispys. I especially like to use multi grain Cheerios, mix in dried cherries, dark chocolate chips and slivered almonds.

Why yes, I do see these awesome krispy treats in my future! I have to admit though, my favorite are the kinda stale plain old fashioned ones you find in the wrapper at gas stations and things. They age like a fine wine ;)
Great recipe Michelle! My father was Italian, and my mother was French/Canadian. Food was front and center at every French/Canadian event. I know I will love this recipe, because I like the crunch of crushed pretzels in any gooey dessert. I can’t wait to look at your other recipes! My favorite rice krispie square is the Butterscotch Treats at ricekrispies.com that incorporate a bit of butterscotch pudding mix into the recipe, which I change up by pouring on my favorite chocolate frosting. I don’t like to wait for the squares to cool, and this frosting can be poured on the hot squares, or on hot brownies, or hot baked cakes, right out of the oven. Enjoy! Lyn

I absolutely LOVE Chubby Hubby and I love homemade Rice Krispies treats (pre-packaged from a store?! Forget it!) So, I’m sure this is amazing!
Have you tried scotcheroos before? It’s the same idea as these bars but with butterscotch chips melted into the chocolate on top. So. Good. The recipe is on the Rice Krispies website (it’s super simple and only needs one measuring cup!).

These just sound delish!!! Have you ever tried using special K cereal with the strawberys in them in place of the rice krispies? The strawberrys end up flavoring the marshmallows and are so yummy. My mother use to make something like this with reg. Special K cereal and pb. and chocolate on top though. Will have to hunt for this recipe too! Oh I am sooo hungry now!!!
