Happy last weekend of summer / first weekend of September! Whaaaaaaat?!
I literally cannot believe we are here already; it feels like just yesterday that Joseph had his last day of school in May and a few days later we were celebrating my cousin’s wedding. And here in a blink, we had parent orientation for Joseph’s new year of school which starts next week and we’re staring at Labor Day weekend. Yowza!

I saw that Eggplant Parmesan is on for your Sunday Dinner this week. Â About a month or so ago, Â I made this for our Sunday Dinner. Â Here’s the catch though . . . . my double wall ovens broke the week before Memorial Day, and I’ve been without since then. Â After replacing the said part, still not working, then replacing the control bar still to no avail, I decided I would try eggplant parmesan on the grill. Â SO good. Â I skipped the frying part and grilled the sliced eggplant which I brushed with olive oil. Â Layered it with all the sauce – and I layered in ricotta – Â all in a foil fan, covered it with foil, and placed the whole thing on the grill and let it meld together that way. Â I also sprinkled seasoned Panko bread crumbs over the grilled eggplant slices as I was layering them in the pan. Â Â I used fresh mozzarella on top. Â This was so easy and the finished eggplant parmesan was delicious! Â I had no leftovers for the next day’s lunch. Â And it was a bit quicker to prepare as well since I skipped the breading and frying step, just off the grill into the foil pan. Â Thought I would share this “tip” with you. Â (and I’m still without my ovens, but the company has agreed to replace them and I should have completely new ovens by the end of the month.) Â
