We are one day away from December and this past weekend has thrown me completely into Christmas mode. To be honest, it really doesn’t take much, but two days of Black Friday shopping and a few Christmas carols, and I am ready to dive head first into the shopping, gift wrapping, and holiday baking. My grandma has made empire cookies around the holidays for as long as I can remember, and they have always been one of my favorites. My loving them is a bit surprising since I usually prefer rich desserts, but I can never get enough of the buttery shortbread-type cookies with jam sandwiched between them and topped with a simple icing. I can’t believe they haven’t been on the site prior to this, so I’m thrilled to share them with you. Let the holiday baking begin!

I love coloring the icing to reflect the festive season, so these are topped with red icing. I didn’t have green food coloring or I would have used that as well. You could always use the regular white icing plain, or top the white icing with red and/or green sprinkles.
You can use your favorite type of jam in these cookies and while I typically use raspberry jam, I was able to try a set of Crofter’s Superfruit Spreads recently and used the South America spread, which is Maqui berries and passionfruit blended with red grapes and morello cherries. This stuff is seriously good. So good. These spreads are 100% organic and include four unique fruit combinations from different regions of the world and are sweetened with fair-trade sugar. The variations include:
♦ Asia – Raspberries and yumberries blended with morello cherries and red grapes.
♦ Europe – Pomegranates and black currants blended with red grapes and morello cherries.
♦ North America – Wild cranberries and blueberries blended with red grapes and morello cherries.
♦ South America – Maqui berries and passionfruit blended with red grapes and morello cherries.
These spreads are perfect for any recipe that calls for your favorite jam, and will liven up your breakfast toast or PB&J sandwich.

Empire Cookies
Yield: About 4 dozen
For the Cookies:
2 cups all-purpose flour
1 teaspoon baking powder
1 stick (4 ounces) unsalted butter, at room temperature
½ cup granulated sugar
1 egg
1 teaspoon vanilla extract
1/3 cup of your favorite jam
For the Icing:
1 cup powdered sugar
¼ teaspoon vanilla extract
1 Tablespoon milk
1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone baking mat; set aside.
2. In a medium bowl, whisk flour and baking powder; set aside.
3. In a large bowl, cream butter and sugar until pale and fluffy. Beat in the egg and vanilla extract. On low speed, beat in the flour mixture just until combined.
4. On a lightly floured surface, roll out the dough to a little less than ¼-inch thick. Using a 1¾-inch round or fluted cookie cutter, cut out rounds. Place about one inch apart on prepared baking sheets. Bake for 8-10 minutes, just until the edges start to color. Watch closely, as they can get too dark rather quickly! Transfer to wire racks to cool completely.
5. Spread bottom side of half of the cookies with about ¼ teaspoon of jam. Top with remaining cookies.
6. To make icing, whisk together the powdered sugar, vanilla extract and milk, adjusting the milk and powdered sugar to reach the desired consistency. Spread over the tops of the cookies. Let stand until icing is completely dry. Cookies can be stored in an airtight container at room temperature.

One of my favorite recipes is with jam are raspberry chocolate crumb bars full of delicious goodness like sweetened condensed milk! I think experimenting with these jams for the bars would be a flavor journey.

My favorite recipe is a cookie called Jewel Brooches … kind of like a jam thumbprint cookie, but the dough is much more buttery and delicious, and they’re tiny. So good!

Oh my gosh, the spreads and the cookies look yummy!! I use a roasted onion and garlic jam along with goat cheese to make the most wonderful grilled pizza.
I like to make a Raspberry Chocolate Nut Bar using raspberry jam, shortbread bottom, meringue-like topping (because it has egg whites in it) with chocolate & nut layers. You only need a very small bar because it’s too rich. What a fun & useful giveaway! Thanks

You take crostini and top it with apple butter and a slice of brie. Melt the brie and top with a sliver of smoked ham. The salty and the sweet and the brie . . . yum! It’s to DIE for!

Crofters is a truly unique jam. We tried it for the first time over Thanksgiving and everyone loved it. We love to put a little jam at the bottom of our custard. Flip out after baking and the warm jam melts all over the custard! Comforting and fanciful in one dessert.

I use grape jam in my spaghetti sauce and meatballs in grape jam and Hienz 57 sauce is good too.
I don’t bake with jam all that often. The only thing that comes to mind are thumbprint cookies… Although there’s some inspiration from the comments above mine, especially about grape jam in spaghetti sauce. I have two favorite recipes using jam. The first are star shaped Christmas cookies with red currant jam or seedless red raspberry jam sandwiched between them. The second are double ginger scones with peach jam (homemade of course). I recently received a jar of Burnt Fig jam from Australia and am loving that heated and poured over ice cream!
I love to make PB & J cookies. I first made these for my best friend. She & I were known as the PB & J girls in college so I decided to make her these yummy double-layered heart shaped peanut butter cookies with grape jelly sandwiched in between.
I love to bake Raspberry Bars – shortbread cookies sandwiched with raspberry seedless jam then dusted with powdered sugar. Yum! Second runner-up is Apricot Dots – same concept but round cookies with apricot jam.
I make a strawberry tart and I use Strawberry jam as the glaze over the strawberries. yummy!!!

Thumbprint cookies and homemade peanut butter and jelly sandwiches. Nothing beats grinding peanuts and boiling down fresh berries for a snack.
My favorite recipe with jam is putting it in vanilla ice cream!!!!!! It gives it a little something extra that regular ice cream mix ins do not do!!!!!

I am SALIVATING. Those jams sound DELISH. I’d use them in my mother-in-law’s recipe for apricot thumbprint cookies – just sub them in for the apricot jam she usually uses. And also just spread them on toast, of course
my favorite jam recipe is to use a berry jam over prok tenderloin and roast it. Then add some chicken stock and make gravy to put on top at the table.
I’m rather simple – my favorite “recipe” using jam is topping a wheel of brie with jam, then wrapping it in puff pastry and baking it. Best if served with sliced pears. Yum!

I love making jam its self during the summer. As long as I can remember all the women in the family get together in the summer and make enough freezer jam for the entire year. I have never found a store bought jam that even comes close. Of course afterwords we use it on everything from cakes to breads, my favorite is in crepes.

These tiny almond shortbread sandwich cookies filled with raspberry jam that I was introduced to by a former student’s mother at Valentine’s Day. I make them as often as I can find a helper, because you have to work fast!!
My son has many food allergies (dairy, soy, gluten, legumes, beef). Jam is a great way to add something special to his cakes. I like to make 2 layer vanilla cakes with a jam filling in between to add moistness and extra flavor.

My favorite recipe so far is taking wonton wrappers, filling them with Nutella and strawberry jam, and deep frying briefly to get the crisp texture of the wrapper. Square Jam Cookie Bars
4 Tablespoons melted butter
1 Cup sugar
1 Teaspoon vanilla extract
1 egg
4 Ounces Shredded Coconut
Use shortbread crust for bars, spread a layer of jam over crust, bake at 350 degrees F for 30 minutes.
It’s not Jam perse, but I do love making grape jelly meatballs. They’re so good and I didn’t realize that they had jelly in them until I asked a friend for the recipe. It’s an alternative to the sweet recipes around this season, and are a great appetizer!

Your jam — and the cookies — sound amazing! I love popovers made using small squares of puff pastry, a slice of brie, a dollop of berry jam. Fold over into a triangle, pInch it together and bake — it comes out all puffy and melty, savory and sweet. So good. On a more basic level, Greek yogurt with a dollop of cherry jam is fabulous. And of course nothing beats hot fresh baked bread spread with delicious jam!

There is nothing better that the cardemom delecacies topped with fresh raspberry jam she makes from the farm down the road. Probably the best treat ever. Just thinking about it now. I love love, love homemade linzer raspberry clove heart cookies. They’re sort of a butter cookie using only cloves for spices. They’re shaped like hearts with a hole in the top of the sandwich through which the jam peeks. I haven’t made them in forever because I haven’t had great jam in forever. I’ve never actually seen Empire cookies before. They look like pure genius.

My all-time favorite recipe using a prepared sweet jam or conserve would have to be baked brie in pastry. When it’s made with good ingredients, it’s transcendental; even when made with indifferent stuff from the corner store, it’s pretty great.
Take a small wheel of brie and spread the top thickly with jam or fruit conserve. (I’m thinking either Superfruit Europe, with currant and pomegranate, or the Superfruit South America, with maqui and passionfruit, would work well.) Then wrap the whole thing up in plain pastry crust, or a sheet of puff pastry, or a few layers of phyllo.
Seal the seams well, but don’t worry about making it fancy; it will bake up to a beautiful flaky golden crust. Cut a slash or two to allow steam to escape. Place on a baking sheet lined with parchment.
Brush the crust with egg wash (for puff pastry or pie crust; beat an egg with a teaspoon of water) or with melted butter (for phyllo) and bake at the temperature recommended for the particular pastry (noted on the package or in the recipe) until everything is golden brown.
Serve it with crackers or — even better! — a baguette, apple slices, or a bunch of dark grapes, or a pile of dried cherries, or a handful of nuts. It’s gorgeous.
