Salted Double Chocolate Peanut Butter Cookies

I was moving along yesterday morning, having a perfectly ho-hum kind of Tuesday when my fellow Pittsburgh bud (and Pens fan) Allison sent me a link to these cookies saying she had a sneaky suspicion they would be right up my alley. We Pittsburghers sure do know each other well. These cookies were DEFINITELY up my alley. I bookmarked the link and then went about my work. And then I opened up the link again. Stared at it. Thought about it. Then I did a quick scan of the ingredients. A fervent mental check of my baking inventory confirmed that I had everything I needed to make these. Look out. Lunchtime came, and these babies were whipped up and in and out of the oven like nobody’s business. My obsession with chocolate and peanut butter continues with these gems.

These cookies help to satisfy a couple of cravings. First of all, the all-important chocolate and peanut butter. It’s pretty much the epitome of dessert combinations for me. And then we have the sweet and salty combo with the peanuts and salt sprinkled on top. It all comes together into one awesome cookie. The peanut butter in the cookie isn’t overwhelming, but it pairs nicely with the chocolate and creates a great backdrop for the peanuts. These cookies are thick and chewy, which I always adore. I made them much larger than the original recipe states, but when it comes to cookies, it’s go big or go home for me. I don’t do dainty cookies!

Salted Double Chocolate Peanut Butter Cookies

Yield: 16 to 18 large cookies
Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 30 minutes
Ingredients:
1¼ cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup (4 ounces) unsalted butter, at room temperature
¾ cup creamy peanut butter
2/3 cup light brown sugar
1/3 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
1 cup semisweet chocolate chips
½ cup peanuts
Coarse salt for sprinklingDirections:
1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or a silicone baking mat.
2. In a medium bowl whisk together the flour, cocoa powder, baking powder, baking soda and salt; set aside.
3. Beat together the butter, peanut butter and both sugars on medium speed until light and fluffy, about 3 minutes, scraping the bowl as needed. Add the eggs one at a time, beating well after each addition. Add the vanilla extract. Scrape the bowl. Add the dry ingredients and mix on low until just combined. Using a rubber spatula, stir in the chocolate chips and peanuts.
4. Drop by two heaping tablespoonfuls of dough, spacing the cookies about 2 inches apart. Sprinkle a small pinch of coarse salt on top of each cookie. Bake for about 12 minutes, or until the outside of the cookies are set but the middles are still a little soft. Cool cookies on the baking sheets. Store in an airtight container.

A classic combination. Sounds yummy. Those cookies look amazing. I wonder how they would be with almond butter. We have a super large jar of it.

These look amazing. My go-to chocolate cookie is called a Mankiller. A similar chocolate batter with chopped Reese’s peanut butter cups mixed in. I’m going to have to give these a try though!

Ohhh, it is raining and cold here in Rhody and this recipe greeted me when I got home from school, I am so making these tonight! I read the comments from the original posting and there was a criticism about the number of nuts and chocolate chips (too many), you have same amounts and I take it had no problem with their numbers??? I hate when all the chips won’t get incorporated into the dough! Thanks for the recipe can’t wait to bake them…

A food BLOG is different than a food REVIEW website like all-recipes. I agree that the comments on blogs are not as helpful in helping you bake your own as a rating review. I did make these and they were close to perfection. The only change I will make next time is too add 1-2 tbsp more sugar. Typically I feel most cookies are too sweet, but these I actually felt these could be a bit more sweet. I also used 3/4 tsp salt in the dough and it seemed perfect.

Don’t hate me, but I hate peanuts! I live in Georgia so hating peanuts is almost considered a sin in this state. I made the cookies but used more butter rather than p/b and substituted pecans. The cookies turned out marvelous w/o peanuts and they were more crunchy because of the extra butta.

Wow! You can tell how soft and chewy these cookies are by looking at your photos. Plus, the chocolate/pb combination is always a winner in my book.

Recently newly wed and a complete beginner to the baking game I really wanted to impress my husband with some wicked cookies. Everyone says they have the best recipe. They haven’t tried this one. It is amazing! Perfectly chewy and soft. I’m not a hugh sweet fan so the salty kick was a perfect balance. These cookies are not allowed in my house while I am pms-ing or they get brought into bed with me

My only question is why didn’t I think of this?? I had a hard time not eating all the batter.

Just made these about 1/2 hour ago. They are ridiculously delicious.
I didn’t change anything about the recipe but, next time, I might chop the peanuts into smaller pieces.

I have made this recipe quite a few times now and I love it!!!!! I substitute the peanuts for toffee though (sometimes peanut butter chips). The cookie is perfect, It is thick and chewy. My fiance doesn’t like chocolate cookies, so I also want to give it a whirl without the cocoa powder and see how those turn out. I love it. Thanks!!!!!

Oh, man, I forgot to even salt these things, and they were still supremely delicious. I used some almond butter I made last week and substituted cashews because I already had them on hand… Sooooooo yummy. Thanks for sharing!

Okay everyone, I run a bakery out of my home, and a bunch of stuff always soooomehow end up in my husbands mouth. ALL of these cookies, (and I made them balled and ‘criss-crossed” with a fork so they were much smaller, the way I like them to be, ended up with about 45) were sold in less than two hours. My husband has been making googly eyes at me ever since!
HUGELY RECOMMENDED, make, bake, and enjoy!!
