Gazpacho

We all know that I am most definitely not the queen of vegetables. I’m barely the princess of semi-healthy. But I’ve been trying. Really, I have. I’m making a concerted effort to eat more vegetables because I know they’re ultra good for me. And in doing so I’ve been experimenting with different dishes in an attempt to get my taste buds digging some veggies. Now that it’s getting warmer I thought that gazpacho would be a great dish to try. All of the vegetables in it are vegetables that I don’t necessarily hate, so that was a good first step. Chopped into itsy bitsy pieces? Even better! I am happy to report that this might just be the key to significantly upping my daily vegetable intake.

The aroma of this gazpacho is positively intoxicating. It’s so fresh, you almost feel healthier just smelling it.

I bought my vegetables from my local supermarket, and can only imagine how infinitely better this would be with fresh-picked vegetables from your own garden. It makes me want to go out there right now and start tilling soil! I will definitely keep this stocked in the fridge this summer to make sure I keep eating my veggies :)

One year ago: Parmesan & Thyme Crackers

Gazpacho

Yield: 8 servings

Prep Time: 30 minutes

Cook Time: 2 hours (chill time)

Total Time: 30 minutes

Ingredients:

2 cloves garlic, minced
½ red onion, diced, divided
1 large cucumber, diced, divided
5 Roma tomatoes, diced, divided
1 zucchini, diced, divided
2 stalks celery, diced, divided
1 dash salt, to taste
4 cups tomato juice, divided
¼ cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons white sugar
6 dashes Tabasco
1 dash black pepper, to taste

Directions:

1. In the bowl of a food processor or in a blender, combine the minced garlic with half the red onion, half the cucumber, half the tomato, half the zucchini, half the celery, half the tomato juice, and all of the olive oil, red wine vinegar, sugar, Tabasco, and salt.

2. Pulse until all ingredients are blended well; mixture will have a nice speckled, colorful texture.

3. Pour into a large bowl and add the rest of the tomato juice, and half of the remaining onion, cucumber, tomato, zucchini, and celery. (Reserve the rest of the diced vegetables for garnish.)

4. Stir mixture together and check seasonings, adding salt if needed. Chill soup for at least 2 hours.

5. Remove the soup from the refrigerator and stir. Ladle into a bowl and garnish with remaining diced vegetables, a sliver of fresh avocado, sour cream, and cilantro. Serve with grilled bread or toasted baguette.

      This is similar to mine except I use a red pepper instead of zucchini and celery and real wine instead of wine vinegar. This is one of my all time favorites. I think I will try it with zucchini.

    This looks absolutely perfect. I’ve been wanting a gazpacho recipe for ages, but most of them seem to have you blend everything to a smooth soup, which didn’t really appeal. But this sounds perfect! I may even nip out so I can make it today :)

    There must be something wrong with me since I love vegetables a lot, and just steamed no butter, oil etc requred. Don’t get me wrong, I love those too, but steamed carrots, broccoli, asparagus are all favourites of mine, and I would take those over a gussied up version any time. I’ve never had gazpacho before, never really thought about it, but I’m really excited to try it now (your top picture is mouth watering).

    Gazpacho is one of the very first things we make when the fresh veggies start rolling in and we usually keep a pitcher of it int he refrigerator all summer. It’s so refreshing for a summer lunch. Yummy recipe and lovely photos!

    Michelle: Gazpacho is one of my very favorite summer meals! Once I start, I find it is addictive and I can eat it for almost every meal! I plan my garden planting for growing the ingredients for homemade gazpacho, salsa, and chile verde.

    I really look forward to trying your recipe — I’ve never had gazpacho with zucchini in it, so I look forward to trying that addition!

    You might want to try this with Rice Vinegar — to me it seems to give a lighter flavor.

    I love a good gazpacho. I once had one that was all white – grapes and white veggies and it was excellent. This looks good too. I am also trying to put more veggies in things. Tonight we had tomatillos, onions and avocado.

    I made this last week. It is like eating a bowl of summer! Thanks so much for the recipe. Only changes I made were to reduce the olive oil to about 2 T. and leave out the zucchini (didn’t have any at that time) and hot sauce (kids don’t like it). I’m going to make this and use it to reach my goal of eating more vegetables.

  27. I’m a HUGE fan of gazpacho. It’s a drinkable salad. I do like a little bit of chunkiness to it though so I can bite into some crisp cucumber and green pepper. I agree with the smell too; you feel healthier just putting your face over the bowl. Yours looks perfect, absolutely wonderful.
