No-Bake Peanut Butter Butterscotch Crisp Cookies

Sometimes it’s nice to slow life down just a little bit. Stop and smell the roses. Doesn’t it feel like we’re always rushing somewhere? Or rushing to get something done, so we can move on to the next thing or hurry out the door? I feel like life moves way too fast in our uber-ambitious culture. For instance, I have been eating Smucker’s natural peanut butter (the chunky variety, thank-you-very-much) for at least 6 months now. Almost every day I open that jar. Can you believe it was only yesterday that I realized there was a recipe on the lid?? Talk about not paying attention! The silver lining? It was a great recipe, one I could whip up in record time, and share with you today. I know how much you all love the original no-bake cookies, and figured you would really like this one!

Just like regular no-bakes, all you have to do is melt the ingredients together, stir in the mix-ins, scoop onto a sheet, and then chill until they’re set! Easy peasy! It’s a great recipe to make with kids, too.

The original recipe called for chow mein noodles, but I’m all about maximizing my pantry and since I had a half-full box of Rice Krispies leftover from some other recipe, I decided to make the swap. Plus, pretty much anything with that characteristic crunch turns out fantastic! I can see myself doing some serious experimenting with this base recipe – swapping out the butterscotch for things like chocolate, toffee, maybe those mint chocolate chips around the holidays? Loads of possibilities!

No-Bake Peanut Butter Butterscotch Crisp Cookies

Yield: 4 dozen cookies

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour 20 minutes

Ingredients:

1¾ cups peanut butter (creamy or chunky, natural or regular)
12 ounces butterscotch chips
1 cup white chocolate chips
1 cup chopped salted peanuts
3 cups Rice Krispies cereal

Directions:

1. Line two baking sheets with parchment paper; set aside.

2. In a medium saucepan combine the peanut butter, butterscotch chips and white chocolate chips over low heat, stirring occasionally until completely melted and smooth.

3. Stir in the peanuts and Rice Krispies cereal. Drop mounds (about 2 tablespoons each) onto the parchment-lined baking sheets. (You could also use a medium-size cookie scoop.) Chill until set, about 1 hour. Store in an airtight container at room temperature or in the refrigerator.

    The only crunchy thing I have on hand right now is Fiber 1 cereal.. I wonder if all the good peanutbuttery/chippit-ey sweetness will totally mask all that fiber…

    Ok I totally misread the title as being BUTTERSQUASH…I thought, how interesting…you made it look so delightful! although the butterscotch makes more scense, I’m wondering how squash would fare in a baked treat.

    To this day my favourite no bake is still the traditional Rice Krispies Squares, and it doesn’t have to be a fancy version either. Every time I eat one I am instantly transported to my childhood.

    My grandma made a version of these cookies, only with Special K cereal. Think her recipe also has corn syrup and no white chocolate chips. It was one of my favorite cookies when we stopped to visit. She made the best cookies and bars!

    My mother made chocolate no-bake cookies using chow mein noodles & I’ve seen Scotcheroos, but the white chocolate is a new twist. I love the chocolate/peanut butter/oatmeal ones because I always have the fixins on hand. Enjoy your Labor Day weekend!

    i didn’t have butterscotch or white choco chips….. so i improvised and made a choco hazelnut version of this cookie. i substituted homemade almond butter for pb(would have made hazelnut butter but too lazy), added a cup of nutella, substituted chopped salted hazelnuts for peanuts and used semi sweet and milk choco chips. these were awesome:). my kitchen was really warm so it seemed as though they would never set up. thought we would be eating them with a spoon. but they finally set. probably a little softer than original recipe because of the nutella, but nothing major. so many possible variations for this recipe. i think i will try macadamia/craisin/orange combo next:).

    I had tried this recipe 2 times. It turns up with chewy and soft texture. Is it suppose to be like that? Or i done some mistake during the process? I hope some one can reply me and tell me the correct texture because i plan to do this for Christmas night. Thank you.

    I made these slightly differently as I didn’t have all the ingredients (and the stores were closed!). I made them with milk chocolate chips instead of butterscotch and with gluten-free rice krispies (my best friend has a gluten allergy) and they turned out delish! If I were to make them again, I would definitely try the original recipe and maybe a mix of milk and semi-sweet chocolate chips. Thanks “Brown Eyed Baker” for another delicious baking recipe!!

    I had bought the butterscotch chips but when I got home I realizedI only had two oz of white chocolate on hand, so I used that, and did the rest with chococolate and they came out yummy!
