Breakfast Sausage, Egg & Cheese Casserole

As promised yesterday, I bring you another breakfast casserole today. This one is more of the savory variety, with a heavy dose of sausage and cheese.
Puffed pieces of bread, set with eggs, and full of sausage and melted cheese. It’s wonderful right out of the oven – browned, puffy and cheesy. It’s a great complement to a sweeter offering, such as the French toast casserole, so you can enjoy a piece of each! Yet another feast-worthy breakfast.

I have always wanted to host a Christmas brunch, maybe one of these days! I’m thinking a couple of breakfast casseroles, some scones, monkey bread, cinnamon rolls, and of course… mimosas!

Breakfast Sausage, Egg & Cheese Casserole
Ingredients
- 9 eggs
- 9 slices of Italian bread, about an inch thick, crusts removed, cubed
- 1 pound (453.59 g) breakfast sausage
- ¾ cup (81 g) shredded Swiss cheese
- ¾ cup (84.75 g) shredded cheddar cheese
- ¾ cup (183 ml) milk
- 1½ teaspoons (1.5 teaspoons) salt
Instructions
- Crumble and cook the sausage according to package directions; drain and set aside.
- Lightly whisk together the eggs until combined. Mix in all other ingredients, and then fold in sausage.
- Pour the mixture into a greased 9×13-inch baking pan. Cover and refrigerate overnight.
- The next day, preheat the oven to 350 degrees F. Bake, uncovered for 45 minutes. Let sit for 10 minutes before serving.

This is delicious. I do have a question on your nutritional information. How many cups/ounces/grams is in the serving you have the nutritional data on?
This breakfast casserole is simply delicious and so easy to assemble!! My hubby and I love it, but need to ask, can I cut into servings, wrap each one separate, and then freeze? Sometimes, hubby likes something he can just grab out of freezer, pop in microwave and eat away!

Hi Jamie, The bread helps soak up the eggs; you can leave it out but it would basically be a baked omelet. If you’re okay with that, then go ahead!
Can I make this up two days ahead of time? Serving it the morning of my daughter’s wedding and won’t have time to make the day before?
Hi Sandra, I haven’t done that, my only concern would be that the bread would break down totally. I would just try it ahead of time and make sure it’s okay before making it for the big day! And congratulations to your daughter! :)

Hi Kari, I have not frozen it before baking; I’m not sure how it would work with the eggs.
I made this lastnight and had it for brunch today! It’s excellent. My husband raves about his moms breakfast casseroles, so I decided to try to make this one and he loved it! The only thing I changed was I used a 1/2 teaspoon of salt. Just a personal preference as sausage tastes salty to me.
