The Weekend Dish: 1/27/2018
Is it really the last weekend in January? I feel like we just took down Christmas decorations, and now we’re knocking on the door of the Super Bowl and Valentine’s Day (and Mardi Gras!). Crazy!
You’ll be thrilled to know that I’m fiiiiiiiinally making my father-in-law’s famous eggplant Parmesan for dinner tomorrow, so I can take tons of notes and share it with you in the near future. So many of you have been asking for the recipe for ages, and I’m excited to finally be tackling it myself. It’s seriously the BEST eggplant parm!

During my last round of blood work with my glucose test, it showed that I’m still anemic, even though I’ve been taking an iron supplement since my 1st trimester. My doctor wants me to up my nutritional iron intake, so I made a pot of this lentil soup since lentils are very high in iron, and it’s DELICIOUS!
These smoked ribs with honey butter brown sugar make me want to run out and buy a smoker!

If you are taking ferrous sulfate, it doesnt absorb as well as ferrous gluconate, which doesn’t absorb as well as heme iron. Point is, there are irons that absorb better than others & don’t cause as much stomach upset. Good luck getting your iron up!
Can.not.wait. for the eggplant parmigiana to come soon!  The last few summers I’ve been growing eggplants in my garden specifically for eggplant parm.  I’ve made you FIL’s sauce and his meatballs, both recipes being fantastic.   Sometimes I think the key is in the seasonings and which cheese is used, like parmesan or romano, or a combination of the two for eggplant parmesan  . . . . but there are definitely some recipes that are better than others.  Can’t wait for his eggplant parm recipe to give it try.

I’ve collected more recipes for lentil soup than anything else. Â I finally made a basic soup recipe with variations. Â One thing I haven’t done is blend part of the soup. Â I sometimes add a 5-6 ounce bag of baby spinach to the soup, which I coarsely chop. Â I definitely agree with adding lemon to the soup, though sometimes I add cider or red wine vinegar. Â
