Baked Mac n’ Cheese

Nothing can you make you feel cozier than a big bowl of warm and creamy mac n’ cheese. I’ve had my eye out for a great homemade baked mac n’ cheese recipe for awhile now and I finally found one that I wanted to give a shot.

My review of the recipe is that it was extremely tasty - I loved it.

OREO® Cheesecake

Yep, I’m completely weird and baked my own birthday cake! I love, love, love the OREO cheesecake from the Cheesecake Factory and have been craving it. Instead of driving out to buy it I decided to finally use the recipe that I got off of The Nest. It was incredibly easy to put together and came out smooth and creamy - PERFECT! I didn’t change anything from the original recipe, except I baked it for an extra 5 minutes.

Texas Sheet Cake

I have been making this chocolate sheet cake recipe for about a year now and I have never been disappointed. I do wonder, though, how it managed to make its way into Cooking Light with the amount of butter and sugar that is in this recipe. No matter though, I do not discriminate! This is a very straightforward recipe to put together and to be quite honest - the icing makes this cake completely worth it. It is so intensely chocolatey and sugary that I often eat too much before putting it on the cake and need to wait before I have my first bite of cake ;-)

Mexican Rice

Last week I was in the mood for something a little different. I had never made fajitas at home before so I grilled up chicken, onions and peppers and had all the fixings on the side. To go with it I made a Mexican-style rice. I loved it so I’ll definitely be keeping the recipe!

Mexican Rice

3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth

(A lot of the recipes I saw called for cumin or other spices, but I chose to omit them.)

1. Heat oil in large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with garlic salt.

2. Stir in onions and cook until tender. Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
