Taco Rice Salad

I saved a Cooking Light recipe ages ago and finally got around to trying it tonight. I really enjoy Mexican food and I usually make fajitas, but this recipe for taco salad sounded insanely good and I couldn’t wait to make it! The only things I changed were ommitting the chili powder and cumin to make it more mild, and ommitting the chopped tomato because I hate tomatoes. This turned out fabulous – I’ll be saving this recipe :)

I made tortilla bowls using fajita wraps that I had in the house. They were super easy to make – I inverted two ramekin cups on a baking pan, coated them with cooking spray and laid the tortillas on top. I brushed them with some olive oil and baked them at 400 degrees for about 10 minutes, until browned and crispy.

Chicken Salad

This is a delayed Mother’s Day weekend post :) When I had my mom and sister over on Saturday for lunch, I made my mom’s favorite lunch – chicken salad. I didn’t follow a recipe but just threw together what I thought sounded good. My mom loved it! I served these on croissants – you could do any type of roll, or even lettuce cups.

**Note – I didn’t put any nuts in this salad because I’m allergic, but I think cashews or walnuts would be great!

Baked Pasta

I had never made a baked pasta dish before this weekend, so I decided to give it a shot. I looked through tons and tons of recipes before deciding to make up my own. I also used a new recipe for sauce that I made by combining my favorite parts of different recipes. I definitely think this will be my new sauce recipe! I added the recipe for the sauce at the bottom of this post.

Dark Chocolate Chip Scones

These scones were one of my first baking projects and have turned into one of my family’s favorite treats. These are honestly one of the simplest and quickest baking recipes that I have in my arsenal. One bowl, no appliances, and a quick 20 minute bake time make these a great recipe to keep in your back pocket for when you find out company is coming at the last moment or you need something fast to whip up for breakfast for house guests. The scones have a very tender texture that make them almost melt in your mouth. Paired with a slight crunch on the outside from the sugar and the sweet chocolate chips, these are guaranteed to please the harshest of critics.

Pepperoni + Cheese + Bread = YUM!

That’s a direct quote from KayteandRob :)

My grandma is famous for her pepperoni rolls. She has made them for as long as I can remember and I always gobble them up as soon as I can get my hands on them. I’ve been wanting to try to make them but was a little nervous about messing up a “classic”. Tonight I finally made them and they turned out GREAT.

The “recipe” is not much of one, and it is super simple! I didn’t measure anything, just went on sight, and the knowledge that I like a lot of pepperoni!
