Homemade Shamrock Shake

Happy St. Patrick’s Day everyone!

I wanted to share one more quick, festive recipe with you that can be whipped up in 5 minutes if you’re looking for a last-minute St. Paddy’s Day recipe. The month of March has become synonymous with Shamrock Shakes at McDonald’s – minty, green and wonderfully thick, they definitely lure more than a few people through the drive-thru for a quick shamrock shake fix. As with most favorite store-bought treats, I love being able to recreate them at home with my own ingredients, and this shake is no exception. And since I was already on a bit of a roll with the malted vanilla milkshake, I figured I should keep truckin’ along and whip up one of these shakes.

The best part, of course, is how quickly you can whip up one of these babies. I used my favorite homemade vanilla ice cream with a 2:1 ratio to milk to keep the shake thick, and just enough mint extract for that clean minty flavor, yet not overpowering. You can adjust the amount of green food coloring to make it whatever shade of green you’d like. A swirl of whipped cream, some festive sprinkles, and you’re ready to grab a straw and slurp away!

Homemade Shamrock Shake

Yield: 2 shakes

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

3 cups of your favorite vanilla ice cream
1½ cups whole milk
½ teaspoon mint extract
Green food coloring (enough to get the shade of green you want)

Directions:

Combine all ingredients in a blender until smooth and blended. Divide between two glasses, top with whipped cream and enjoy!

    We may have St. Paddy’s day inspired food all week at our house! Our menu tonight is to be baked cod and oven fries with a horseradish coleslaw. Dessert is a Guinness gingerbread cake with a cider cream filling.

    This looks great! I bet you could use Creme De Menthe in place of the extract as well! That might also allow to skip the food coloring.

    Love Shamrock shakes! This year I made my own variation of homemade mint ice cream instead. I used mint flavoring and green coloring like you did for this shake, and then added a bunch of crushed Thin Mint Girl Scout cookies at the end. Tasted just as good as a Shamrock Shake!

    Too much milk. I tried it and only used 1 cup of milk and it was still too runny. I’d recommend 3/4 cup milk.
