Jalapeño Popper Dip
I love any excuse I can come up with for making, and subsequently devouring, all sorts of delicious dips. You might remember that back right before Christmas my friend Beth held a “dip party” at her house. That gathering brought us the Buffalo Chicken Dip, Hot Reuben Dip, and the Sausage Dip. It was a seriously genius idea. Now that the NFL lockout is over and we’re guaranteed the ability to watch football through the fall and early winter, I’m celebrating with a football-season worthy dip. This is a perfect time of year to introduce this dip – it’s a great choice for all of your late-summer gatherings, and is perfect for any game-day get-togethers you’re planning once the season gets under way. And if you’re not a football fan, then I encourage you to come up with any excuse necessary to make this as soon as humanely possible!

This dip is everything that makes jalapeño poppers so addicting, and then some. It’s ooey, gooey, creamy, cheesy and spicy. It has bacon. It has a cheesy, buttery breadcrumb crust. It’s dip heaven. And it would definitely go well with a cold beer. I’m already craving another batch!

Jalapeño Popper Dip

Yield: 6 to 8 servings
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients:
16 ounces cream cheese, at room temperature
1 cup mayonnaise
8 pieces of bacon, cooked and chopped up
6 jalapeños, minced (if you can't get fresh, substitute a 4-ounce can diced jalapeño peppers, drained)
2 cloves garlic, minced
½ teaspoon cumin
1½ cups shredded cheddar cheeseTopping:
1 cup panko breadcrumbs
1 cup grated Parmesan cheese
4 tablespoons unsalted butter, meltedDirections:
1. Preheat oven to 375 degrees F.
2. Combine the cream cheese, mayonnaise, bacon, jalapenos, garlic, cumin and cheddar cheese in a mixing bowl. Pour the mixture into a casserole dish or 9x13 baking dish.
3. Combine the panko breadcrumbs, Parmesan cheese and melted butter in a small bowl, tossing with a fork until the mixture is evenly moistened. Sprinkle evenly over the cream cheese mixture.
4. Bake in the preheated oven for 25 to 30 minutes, until the top is golden brown and the dip is bubbling. Let rest for 5 minutes before serving. Serve with your favorite tortilla chips, crackers, vegetables, etc.

I love making dips! But I haven’t had a party to bring an appetizer to in so long. I am usually the one hosting and the deal we have with friends is whoever hosts does the entree and everyone else brings the rest.

This looks amazing. I love dips myself. I have made Buffalo Chicken Dip, Pizza Dip and a few others over the years. My favorites were the Pizza Dip and the 7 Layered Dip. They seemed to go over the best with my friends. Thanks for this one! Mmmm can’t wait to try it.

I love dip, too. If I go to a party and there is pretty much any type of dip, I just can’t help myself. I will eat dip over the main courses! Good thing I don’t go to that many parties. Love Jalapeno dip – the bacon is a great addition.

I made this on Saturday for a family party. It was a huge success. Everyone kept asking what it was & then went back for seconds. Served with crackers or tortilla chips. The quantity it made was just right because I had none left. We had about 25 people.

I made this dip this past weekend for a family party. While, it was a big hit, I felt a bit let down. When I read jalapeno dip i thought there was going to be some “bite” to it. The heat was not there, even using 6 peppers. It tasted like a cheese & bacon dip. I really felt that the pepper taste was lost.

The heat will all be dependant on your jalapenos. If you really like it hot, look for ones with striations on the skins. They are hotter. You can always leave a few of the seeds in as well.

I did make this dip the night before & it baked up great. I just took it out of the fridge for about 10 mins before I put it in the oven& then baked it for 10 mins without the topping to make sure the inside was warmw/o burning the top.

Made a batch this weekend, it was devoured!! Everyone loved it. Just a hint of spice and so much flavor. I used the cured jalapeno, garlic bacon from Whole Foods in it too – YUM.

This dip is fabulous. I made the entire recipe for a party with 25 people and cut it in half to take to a tailgating party with less than 10 people. It has been a hit and I’ve already shared the recipe a couple of times.

Love all of your dip recipes! I made this for a girl’s night and everyone LOVED it. I think next time I make it (and there will be a next time for sure!), I might cut out the bacon. While I love anything with bacon, it distracted from the pepper flavors. I might also add a little more heat with some Tabasco Jalapeno Sauce.

Hi Kim, You can double the recipe, but be sure you use a larger casserole dish. You may need to bake it a little longer, as well.

Do you generally leave the seeds/membranes of the jalapenos? or 1/2? or none? Just wanted to make sure it had a bite w/o killing anybody.

I tried this and it was great! I would add a little less cheddar than I did though. It got kind of hard and less creamy as it cooled down. Also, I added 8 large jalapeños and it was perfect, but I like the spicier the better. Will definitely use again though!
