Loaded Baked Potato Dip
This loaded baked potato dip combines all of the fantastic flavors of a classic loaded baked potato – sour cream, bacon, cheese and scallions. Scoop away with potato chips!

For the longest time, the only way I ever made a baked potato was in the microwave. Sometimes you just can’t argue with quick and easy, right? Well, once I started baking them in the oven, there was no turning back for me – baked potato perfection! I typically keep it fairly simple when I have baked potatoes and usually top them with butter, salt and a lot of pepper. However, there really is nothing better than a loaded baked potato when you’re feeling the urge to splurge. A steaming hot baked potato topped with mounds of sour cream, bacon, cheese, and chives. This is heaven for most of us carbaholics (and cheese and bacon fanatics) – so much goodness!
Now imagine everything that is awesome about a loaded baked potato and throw it into a dip that you can scoop up with potato chips. A favorite meal/side dish instantly became one of my favorite appetizers – behold the loaded baked potato dip!

While it takes a little bit of patience to wait for a baked potato in the oven, this dip definitely satisfies my quick and easy soft spot for microwave baked potatoes. This loaded baked potato dip contains only four ingredients, and it can easily be made in less than 15 minutes. It’s one of the most outstanding dips I’ve ever chowed down on… supremely addictive.
I’ve made this countless times over the last handful of years and each and every time it’s met with oooh’s and ahhh’s. When people ask what’s in it, no one can believe how simple it is to make. Keep this recipe on hand for an easy party dip – it’s great for everything from the Super Bowl to a casual get together and summer picnics!

Love this dip? Here are a few of my other favorites:

Jalapeno Popper Dip: Spicy, creamy, cheesy and a crunchy topping!

Spinach Dip: So easy and delicious – you wouldn’t even know it’s on the healthy side!

Slow Cooker Spicy Beef Queso Dip: Best. Queso. EVER!

I make the base with cream cheese, light mayo, and sour cream. So creamy and yummy.
Maybe I am dumb, but do you scoop out the baked potato or make it like a potato boat?I am not clear. If you scrape it out how many potatos do you use? I see it in the bowl but do not see the potatos themselves. Could you clear this up. I looks good and easy if I could figure it out. Thank you
Hi Jackie, You don’t use an actual potato in this dip. The concept of the dip is the “loaded” part of loaded baked potato – sour cream, bacon, cheese and chives (or green onions)… the potato part is the potato chip that you use to dip with.
Hi Jackie,
Yes, you are.
And you are rude
Simply joking… Just don’t understand all the confusion, I thought the author of the recipe was quite clear.
this dip is DELICIOUS! I’m actually eating some now, for breakfast, it’s bosses day; and it’s even more delicious with Doritos and Fritos honey bbq flavor twists; this would be perfect for Sports Sunday or any day! Also, take it up a notch by shredding a little jalepeno cheese in it – uhhmmm, yum!!!
Made this for a fantasy football draft party, and it was a HUGE hit! I left out the green onions (several of the people who were coming don’t like onion of any kind) and it was still amazing! I was worried it was going to taste too sour creamy (after all, there’s 16 oz in this!!) But it didn’t at all! I think letting it set for a couple of hours is the most important part. The yummy bacon flavor melded with the sour cream, and it was just smokey, cheesy, creamy and delicious!! My son ate half of it on his own, he loved it so much!! Making it for a Pee Wee football tailgate tomorrow!
YUMM!!! I am making this tomorrow, my friends are going to go crazy for this!
I make a recipe very similar, except mine is a warm dip. 16oz sour cream, 8oz cream cheese, 2 cups shredded cheddar, 3oz pkg Oscar Mayer real bacon pieces, and 1 cup green onions chopped. Throw it all in the crock pot until mixed and warm. Serve with potato chips. Sooo good! I’ve never had the cold version. I’ll definitely be trying it!
This would be awesome on an actual baked potato, too, I bet! Mmm…
If you prefer your potatoes in the oven a great way to cut the cook time is a new gizmo from Pampered Chef. It’s in with the grilling stuff but would work just as well in the oven and it was only $10. It has a piece if metal that you slap your potatoe on so the heat goes into the middle and you cook from the inside and the outside. I never keep the boxes so no clue what it’s called but it was love at first potatoe.
Psst! There is no “e” at the end of potato.
This reminds me of crack dip – sour cream, pack of ranch, cheese and real bacon bits.
I love food like this – they are so easy and perfect to whip up when family is coming over. Thanks for sharing! I’ll have to give it a try!
Can’t wait to try this. Was wondering if you could substitute plain yogurt for the sour cream?
thanks!!
Hi Katie, I personally wouldn’t, but if you REALLY like yogurt and think it would taste good with the other ingredients, you certainly can. I’m just not sure that the resulting flavor would be as close to the original as you’d want.
thank you. I will stick with good ole’ sour cream!!!
This sounds delicious…….. but – I think I’d want to heat it up to eat.
I LOVE loaded baked potatoes!! YUMMY!
I make basically the same thing but I heat mine up in the oven, then transfer to a bread bowl and then serve with pita chips, bagel chips and pretzel rods, it tastes even better warm!
Great dip! I’ve made this a few times and on a cold night here in Sydney, transfered the cold dip into a pie pan and heated in the oven- until the cheese on top was melted and browned slightly- soo yummy! Just a tip, if you do choose to heat the dip- don’t use Low Fat or Light Sour Cream, it doesn’t hold up to the ovens heat (or at least the varietys we have here don’t).
I just made this dip for my husband’s ‘Hail and Farewell” tomorrow night. He is going away for Army training. I am SUPER excited about it. It was SO easy to make. I did double the recipe as we will be having several guests tomorrow night. We are actually going to use waffle fries for our dipping. I hope it turns out well! Thanks for the recipe!
This sounds so yummy! Another great way to do baked potatoes is in the crock pot….rub with just a little olive oil and sprinkle with kosher salt (or anything you like), pop them in the crock pot on low for 3-4 hours and voila! A no hassle baked potato that you made while you went about your day!
This is perfection! And so simple too.
I made the dip for the Super Bowl as well! Huge Hit with everyone!
HUGE hit at the Super Bowl party tonight…It’s a very thick dip, though, so make sure you use a good, sturdy potato chip, like the wavy cut in the picture. I also used lower fat ingredients and didn’t tell anyone…no one was the wiser. Thanks, Michelle!
Making this tomorrow for the Super Bowl! I’m going to make steak fries as my dipper so we’ll get lots of loaded baked potato flavor :D
And go Giants!
I’ve been on a huge dipping kick lately… Love the look of this one! :)
Oh my, this sounds right my my alley!
Wow, that sounds amazing! I love dips!
Definitely making this! Will try it out here at home first (poor me!), then make a batch for our soccer parent meeting next weekend. Thinking of adding some dashes of garlic powder and maybe a finely diced carmelized onion. Any thoughts?
I’m sure it would be good! I love the simplicity of the regular loaded baked potato ingredients, but the beauty in food is that you can easily adjust recipes to suit your tastes. I say go for it if you’ll like it!
Sounds like a perfect dish – my four hungry daughters will thank you!
Mary
That baked potato dip is looking so good!
I want to eat this with a spoon … hold the chips. I just want to eat it all :( I can only make this sunday afternoon, 15 minutes before the game or I will eat it all … lol now, that’s how you know you just created a killer dip :)
I want it. I want the whole bowl. Let’s be best friends and do nothing besides eat this dip. (Who cares that we’ll get fat eventually? We’ll be best friends so there won’t be any judgement from each other!)
I like this idea!
This dip looks fabulous! Will definitely be making this one! (I also rub potatoes with olive oil and then I sprinkle them with some kosher salt and bake at a high temperature so the outside is crunchy and inside is soft – delish!)
This dip really is awesome. I add a few dashes of hot sauce and it comes out perfect every single time!
I think I will make this for the super bowl…It looks delish.
