Breakfast Sausage, Egg & Cheese Casserole
As promised yesterday, I bring you another breakfast casserole today. This one is more of the savory variety, with a heavy dose of sausage and cheese. For the last month or so I have been absolutely craving a sausage and egg muffin from McDonald’s. I have yet to give in to that craving, and this casserole totally satisfied it. Puffed pieces of bread, set with eggs, and full of sausage and melted cheese. It’s wonderful right out of the oven – browned, puffy and cheesy. It’s a great complement to a sweeter offering, such as the French toast casserole, so you can enjoy a piece of each! Yet another feast-worthy breakfast.

I have always wanted to host a Christmas brunch, maybe one of these days! I’m thinking a couple of breakfast casseroles, some scones and cinnamon rolls, and of course… mimosas!

Breakfast Sausage, Egg & Cheese Casserole

Yield: 6 to 8 servings
Prep Time: 30 minutes
Cook Time: 45 minutes
Total Time: 1 hour 15 minutes
Ingredients:
9 eggs
9 slices of Italian bread, about an inch thick, crusts removed, cubed
1 pound breakfast sausage
¾ cup shredded Swiss cheese
¾ cup shredded cheddar cheese
¾ cup milk
1½ teaspoons saltDirections:
1. Crumble and cook the sausage according to package directions; drain and set aside.
2. Lightly whisk together the eggs until combined. Mix in all other ingredients, and then fold in sausage.
3. Pour the mixture into a greased 9x13-inch baking pan. Cover and refrigerate overnight.
4. The next day, preheat the oven to 350 degrees F. Bake, uncovered for 45 minutes. Let sit for 10 minutes before serving.

I had that exact same craving a few weeks back and your wonderful buttermilk biscuit with some egg and spicy breakfast sausage gave me the perfect fix so I am taking the opportunity of this post to thank you!!! I do something like this every Christmas-but I use brie & bacon instead of sausage and the other cheeses.

I have been making a similar recipe for years and it is always on my Christmas brunch menu. I add a some ground mustard hot sauce just in case the sausage is not spicy enough.

yummm, i love this — i have also done it with other breakfast meats and different cheeses…it also travels well, stays warm for quite some time and still tastes good at room temp, i have taken something similar to work before too!

This reminds me of Christmas! My family makes the same breakfast every year – egg, sausage and cheese casserole and monkey bread.

Our tradition has always been cinnamon rolls (the canned kind, not the homemade variety). This year we’re still making cinnamon rolls for my dad’s sake, but us girls are making an overnight french toast.

My family’s Christmas tradition is monkey bread and homemade hot chocolate for breakfast on Christmas morning. Can not wait until Sunday morning:).

We’re big scones eaters on Christmas morning! It at least holds us over until we can get through the present and hit brunch time!

This sounds delish! I am planning on making it and your baked french toast casserole with praline topping for Christmas this year. I can’t wait to try them out. I hope they are as good as they look. If so, they will be a new tradition at my house.

I just have to say that when I saw this recipe, I knew it would would be breakfast Christmas morning! I made it with croissants instead……so delicious!!!! It was a huge hit!!

I made this for Christmas morning!! I loved that I could whip it up the night before, and just pop it into the oven while everyone was opening presents! It was delicious! For sure making it next Christmas (and many times in between!) Thank you!!!

I made something like this Christmas morning, except I used bacon, and included fresh spinach, and I used yummy bakery-fresh onion rolls for the bread. I served it with some fresh fruit; it was the perfect holiday breakfast!

My mom makes a very similar brunch casserole. No Swiss cheese, plus about 1/2 – 1 tsp ground mustard (depending on just how many guests she’s expecting). When I make it, I usually include a dash of garlic and onion powders, plus a bit of paprika. I also like to include a bit of baking powder…it seems to help the eggs fluff up a bit more after the overnight in the fridge.

I love that this is made with bread and not refrigerated crescent rolls. It sounds fantastic and I adore the McDonalds Sausage Egg McMuffin, but I don’t get them very often.

On Christmas Eve I throw a breakfast casserole together similar to this, except the kids don’t like the bread on the bottom. I have started using hashbrown patties or just southern hash brown potatoes. The kids love this as it reminds them of a farmer’s omlet with everything. I also make the sticky buns ahead of time. Christmas morning I pull out both pre-made dishes, set the oven at 350 and after 30 minutes, they both are done with little work at all. We have some fresh fruit and juice and we are ready until our early dinner of Prime Rib. Yum!

When you say Italian bread- is that a loaf or a baguette or what kind of Italian bread do you use? Thanks, this looks delicious!
